How To make Seasoned Tempeh Filling In a Steamed Wonton Skin.
8 oz Tempeh, precooked;
- grated or minced fine 2 tb Tamari
1/2 ts Vegetable Bouillon
-dissolved in: 1/2 c Water
1/2 ts Hot Pepper Sesame Oil
1 tb Cornstarch (or Arrowroot)
1 ts Honey
1 c Green Onions; chopped fine
1 c Mushrooms; chopped fine
2 ts Ginger Root, minced
1 pk Wonton Skins (3-inch size)
Directions: Combine half of the tempeh with tamari, water, oil, honey and cornstarch in blender and puree. Take the other half of the tempeh and mix with the vegetables, then add the puree and hand mix. Take 1 rounded tsp of this filling and place in center of Wonton Skin; moisten the outer rim and fold in half pressing the edges to seal. Steam for 8 min. Serve with Sweet and Sour Sauce. Ingredients
Dumpling Wrapper
- 240 g unbleached all-purpose (plain) flour
- 125 ml [½ cup] hot water
- ½ teaspoon salt
Filling
- 397 g [14oz] firm tofu
- 250 g cabbage chop into tiny bits
- 1 carrot chopped
- 2 stalks green onions chopped
Seasoning for filling
- 2 tablespoons soy sauce
- 1 tablespoon toasted sesame oil
- 1 teaspoon black pepper
Dipping Sauce
- 2 tablespoons sambal oelek/sriracha
- 1½ tablespoons soy sauce
- 1 tablespoon maple syrup
- ½ tablespoon toasted sesame oil
- 1 stalk chopped green onions
- ½ teaspoon toasted sesame seeds
Other Ingredients
- oil for cooking
- flour for dusting and cooking
- salt to taste

Let me show you how to make Malaysian otak otak VEGAN, with no fish, or eggs! Instead we'll be using 2 different kinds of tofu to mimic the texture of otak otak. It's so savoury, and so full of flavour - just like the original one!

Vegan Otak Otak
✍️ Full written instructions:
Spice Paste:
6 kaffir lime leaves (daun limau purut)
4 shallots
4 cloves garlic
5 red chilies
5 dried chilies, soaked
3 lemongrass
1 inch galangal
1 inch turmeric
1 sheet of roasted seaweed (nori)
3 candlenuts (buah keras)
2 tsp coriander seeds
1 tsp white peppercorns
1/2 cup or 125ml water
Salt to taste
400g (5 blocks) firm tofu, frozen then thawed
300g smooth, silken tofu
1 tbsp or 10g corn starch
1 1/2 tbsp mushroom seasoning -
1 tbsp oil
60ml coconut cream
2 tbsp rice flour
