INGREDIENTS
• Soft Lady fingers
• 24 ounces (3 packages) cream cheese, softened
• 1 cup powdered sugar
• 2 cups heavy whipping cream
• 1 tablespoon freshly squeezed lemon juice
• 1 tablespoon lemon zest (2 lemons)
Lemon curd
- 1/3 cup lemon juice (2 large lemons)
- 2 egg + 1 yolk
- 1tablespoon corn startch
- 1 tbsp heavy cream
- ½ cup sugar
- 2 tbsp butter

Lemon Cheese Cake (No Bake)

Ingredients
Merie light biscuit ..............................30
Whipped cream.................................. 250 g
Plain butter........................................ 200 g
Cream cheese ..................................100 g
Gelatine............................................ 2 Tbsp
Condensed milk ................................200 g
Chocolate decoratives...................... few
Lemon ..............................................1
Lemon essence .................................few drops
Yellow food colour .............................a (pinch diluted in water)
Method
1.Grind all the biscuits in a mixer to make fine powder.
2.Soak gelatne in hot water for 10 min.blend it.
3. Now mix melted butter and powdered biscuits and make a layer of it in a spring form cake tin . press well to make a tight layer.
keep in freezer for 10-15 min.
4.Take a bowl and blend condensed milk , cream cheese ,lemon zest, gelatine mixture, lemon juice , lemon essence. blend all te ingredients well.now add whipped cream and mix well with a spatula.
5. Take out the cake tin from freezer and make a layer of (condensed milk, cheese cream ) mixture over it.
decorate the top with cream icing,chocolate decoratives and yellow food colour. keep it i fridge for 4 hr. your lemon cheese cake is ready.

Zutaten für 12 Stücke ????
Für den Boden:
100 g Butter in Stücken
200 g Haferkekse
Für die Creme:
400 g Sahne
2 Pck. Sahnesteif
400 g Frischkäse
100 g Puderzucker
1 TL selbst gemachter Vanillezucker
Abrieb und Saft von 1 unbehandelten Zitrone
Für den Lemon Curd:
Abrieb und Saft von 4 unbehandelten Zitronen zzgl. 1 Zitrone in Scheiben zum Garnieren
100 g Zucker
80 g Butter in Stücken
2 Eier
1 Prise Salz
1️⃣ Den Boden der Springform mit Backpapier belegen.
2️⃣ Für den Boden Butter in den Mixtopf geben und 2 Min. | 60 °C | Stufe 1 schmelzen. Kekse zugeben und 10 Sek. | Stufe 8 zerkleinern. Die Masse in die Springform geben, gleichmäßig verteilen und festdrücken. Den Boden kalt stellen und den Mixtopf spülen.
3️⃣ Für die Creme den Rühraufsatz einsetzen. Sahne und Sahnesteif in den gekühlten Mixtopf geben und ohne Zeiteinstellung Stufe 3,5 unter Sichtkontakt steif schlagen. Den Rühraufsatz entnehmen und die Sahne umfüllen.
4️⃣ Die restlichen Zutaten für die Creme in den Mixtopf geben und 20 Sek. | Stufe 4 verrühren. Sahne mit dem Spatel unter die Frischkäsemasse heben und auf dem Keksboden glatt streichen. Den Cheesecake mind. 3 Std. kalt stellen. Den Mixtopf spülen.
5️⃣ Inzwischen für den Curd die Zitronenschale und Zucker in den Mixtopf geben und 20 Sek. | Stufe 8 pulverisieren. Restliche Zutaten zufügen und 20 Sek. | Stufe 6 verrühren. Anschließend mit dem Spatel nach unten schieben und 6 Min. | 100 °C | Stufe 3 aufkochen. Dann 15 Min. | 90 °C | Stufe 3 ohne Messbecher köcheln. Den Messbecher einsetzen und den Curd 30 Sek. | Stufe 6 pürieren. Den Curd vollständig auskühlen lassen.
6️⃣ Die Springform lösen. Den Cheesecake vor dem Servieren mit dem Lemon Curd bestreichen und mit Zitronenscheiben garniert servieren.

Ingredients:
Crust-
15 lemon sandwich cookies
3 TB butter
1 ts lemon zest
Lemon Curd-
1/4 cup sugar
1 egg & 1 egg yolk
1/8 ts salt
2 TB lemon juice
1 TB butter
1 TB heavy cream
Filling-
1/4 cup lemon juice
1 envelope plain gelatin
1 1/2 lbs cream cheese, softened
3/4 cup sugar
1/8 ts salt
1 1/4 cup heavy cream
Instructions:
Crust-
Process lemon cookies until finely ground
Add butter and lemon zest and process until combined
Press into bottom of 9 spring-form pan
Bake 5 - 8 minutes until lightly browned
Lemon Curd-
Whisk together sugar, egg, egg yolk and salt
Add lemon juice and cook over medium low heat, stirring constantly, until thick
Remove from heat and stir in butter and cream
Filling-
Combine lemon juice and gelatin and allow to sit 5 minutes
Microwave gelatin for about 30 seconds until dissolved, set aside
Beat the cream cheese, sugar and salt until creamy
Add heavy cream and mix until light and fluffy
Mix in 1/4 cup of the lemon curd and the gelatin and beat until airy
Pour into the cooled cookie crust and smooth top
Spoon remaining lemon curd in lines over top and drag the spoon through to make a design
Refrigerate 6 hours or until set

상큼하게 정말 맛있는 노오븐 레몬 치즈케이크를 만들었어요~
중간에 넣은 레몬 커드가 상큼하면서도 쫀득한 식감이 나서 치즈케이크 맛과 정말 잘 어울리네요~
치즈케이크에도 레몬 제스트를 넣어 은은한 레몬 향이 나서 더 상큼하게 즐길 수 있답니다~^^
레몬 과육을 살짝 끓여 위에 투명하게 굳혀 마무리 했는데 레몬의 청량한 느낌과 잘 어울리는 것 같아요~
레몬을 끓이지 않고 그냥 사용하면 너무 시고 잘 굳지 않을 수 있어 꼭 끓어 사용해야 좋답니다~
만들어 먹었던 치즈케이크 중에 top3 안에 드는 정말 맛있는 케이크 인 것 같아요~~

▶틀 사이즈 Mold size : 15cm
▶재료
부순 다이제 쿠키 80g
녹인 무염버터 40g
크림치즈 200g
설탕 50g
플레인요거트 40g
바닐라익스트랙 3g
레몬 제스트
젤라틴 4g
50%정도 휘핑한 생크림 120g
물 75g
레몬즙 60g
설탕 45g
옥수수전분 15g
무염버터 15g
달걀노른자 1개
젤라틴 2g
레몬 100g
설탕 50g
물 50g
젤라틴 5g
▶레시피
1. 부순 다이제 쿠키에 녹인 무염버터를 넣고 섞은 뒤 15cm 틀 바닥에 평평히 깔고 냉장실에서 굳힌다.
2. 크림치즈를 부드럽게 풀고 설탕을 넣고 섞은 뒤 플레인요거트, 바닐라익스트랙을 넣고 섞고 레몬 제스트를 넣고 섞는다.
3. 찬물에 10분 정도 불리고 물기를 제거하고 전자레인지에 10초 정도 돌려 녹인 젤라틴을 넣고 섞은 뒤 50% 정도 휘핑한 생크림을 넣고 섞는다.
4. 틀에 반죽의 1/2을 붓고 냉동실에서 20분 정도 굳힌다.
5. 물, 레몬즙, 설탕, 옥수수전분을 냄비에 넣고 섞은 뒤 약불에 올려 걸쭉해질 떄까지 저으며 가열한다.
6. 불에서 내리고 무염버터를 넣고 섞고 달걀노른자를 넣고 섞은 뒤 녹인 젤라틴을 넣고 섞는다.
7. 굳은 치즈케이크 위에 레몬 커드를 붓고 평평히 한 뒤 냉동실에서 20분 정도 굳히고 남은 치즈케이크 반죽을 모두 붓고 평평히 해 냉동실에서 20분 정도 굳힌다.
8. 레몬 과육과 설탕을 냄비에 넣고 끓인 뒤 불에서 내리고 물과 불린 젤라틴을 넣고 섞는다.
9. 틀에 붓고 냉장실에서 3시간 정도 굳힌다.
