1 lb 80/20 ground beef
1 lb ground pork
1 box Boursin Garlic and Herbs
1/4 cup diced parsley
1 bell pepper diced
1/2 large onion diced
2 tbsps sour cream
1-2 tbsps garlic paste
2 beaten eggs
1 1/2 - 2 cups bread crumbs
smoked paprika/italian seasoning/red pepper flakes
salt/pepper/garlic/onion powder
Sauce:
1 cup BBQ
1 cup ketchup
1-2 tbsps tomato paste
2 tbsps dijon mustard
1 tbsps worcestershire sauce
1/4 cup brown sugar
salt and pepper / smoked paprika
Directions:
Begin by prepping your veggies and parsley. Next, saute veggies, parsley, and garlic for 3-4 minutes. Place in freezer to chill after softened. In a large mixing bowl combine remaining ingredients (except sauce ingredients). Work everything together with your hands until it forms one large meatball. Add bread crumbs a little at a time until the loaf takes shape. Place mixture in the fridge for 30 minutes.
Preheat oven to 375 and form into a loaf shape. Place on wire rack or into a loaf pan. Bake for 30-45 minutes. Mix together sauce ingredients over medium low heat. Baste meatloaf with sauce during final 20-30 minutes. Meatloaf is done when it registers 165 degrees internal temp in the middle.

Happy Fun Meal Friday Fam! Today we are having a classic...Homemade Turkey meatloaf! M absolutely loves when I make my turkey meatloaf for him, so this is a fun meal for us! With my homemade mashed potatoes, garlicky green beans, and jalapeno cheddar cornbread on the side, this is one of his favorite meals. So even on our weight loss journey, YES we are enjoying our favorite foods all in moderation. This turkey meatloaf is flavor packed and perfectly moist! This recipe is super quick and easy! Ingredients:
1lb ground turkey (85% lean)
1 medium onion
1tbsp. minced garlic
1 cup breadcrumbs
1/3 cup milk
7-8 tbsp. ketchup
2 tbsp. Worcestershire sauce (1 tbsp. for onion and garlic mixture, 1 tbsp. for meat mixture)
2 large eggs, lightly beaten
1tsp. black pepper
1 tsp. garlic powder
1/2 tsp. onion flakes
1/2 tsp. garlic pepper
salt to taste

Meat Loaf

Ingredients
1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)
Directions
Preheat the oven to 325 degrees F.
Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

Turkey Meatloaf Juicy and Flavorful
I'll show you how to make a juicy and healthy turkey meatloaf that's full of flavor. You won't miss the beef with this satisfying, hearty meatloaf. Onions, green peppers and lots of seasonings make this turkey meatloaf super juicy and tasty.

The ingredients are ½ an onion, ½ a green bell pepper, 1 large clove of garlic, 2 fresh sprigs of thyme, 1 large egg, 2 tbsps whole milk, 1 tbsp ketchup, 1 tbsp worcestershire sauce and 1/2 cup breadcrumbs, 1 tsp brown mustard and 1.5 pounds of ground turkey. You'll also need a foil lined tray to bake the meatloaf. You could also use a shallow baking dish.
Dice the green pepper, peel the garlic clove, we'll grate it later, grate the onion, take the thyme leaves off the stem and finely chop.
To the turkey add ½ tsp salt, ½ tsp ground black pepper, the grated onion, chopped thyme and bell pepper. Grate the garlic over the bowl using a microplane. Crack the egg into the bowl. Squirt a teaspoon of mustard, a tablespoon of ketchup and a tablespoon of worcestershire sauce. Add 2 tbsps of milk and a half cup of breadcrumbs. Mix well. This could use a little more breadcrumbs. I added 2 more tbsps. Form the mix into a loaf shape on your foil lined tray. Squirt ketchup over the top and spread evenly. Bake at 350 degrees for 45 minutes to an hour until cooked. The meatloaf is cooked and the ketchup has formed a nice coating all over. If you press the middle of the meatloaf lightly with your finger, it should be firm which tells you the meat is cooked. Let cool for a few minutes and cut into nice thick slices. You can see how moist the meat is with the onion and peppers adding to the juiciness. It tastes really good, it's so flavorful and satisfying. I couldn't stop eating it!
