The Best Texas Chili Recipe
In Texas, chili is all about meat and spices. This chili recipe won't disappoint. Large chunks of seared beef are seasoned with ancho and guajillo chiles which lend it earthy, deep and sweet taste with a good amount of spiciness that anyone will enjoy.
Recipe:
(adapted with changes from Dinosaur Bar-B-Que: An American Roadhouse)
Ingredients
4 lbs beef chuck (trimmed and cut into 1-inch cubes)
1 Tbsp kosher salt (plus more to taste)
1 Tbsp ground black pepper (plus more to taste)
4 bacon slices (cut into 1-inch pieces)
2 onions (medium size, chopped)
1 green bell pepper (chopped)
2 jalapeno peppers (seeded and membrane removed, chopped
3 garlic cloves (finely chopped)
4 cups beef broth
2 lbs ripe tomatoes (skin removed and chopped (or use canned crushed tomatoes)
2 bay leaves
1 cinnamon stick
2 Tbsp ground ancho chile
1 Tbsp guajillo chile
2 tsp ground cumin
1 1/2 Tbsp dark brown sugar
1 Tbsp dried oregano
Juice of 1/2 lime
1/4 bunch fresh cilantro (chopped)
Shredded cheddar cheese
Chopped red onion
Sliced green onions
Instructions
Season the beef with 1 tablespoon each of salt and pepper and set aside.
Heat a large dutch oven. Toss in bacon pieces and cook over high heat until brown and crispy. Remove the bacon and save for other uses, we just use it for the flavor in this recipe.
Add the beef in small batches and cook until browned on all sides. Transfer the beef to a separate bowl and set aside.
Add the onions, green peppers, and jalapenos into the Dutch oven and stir well, scraping bits from the bottom. Season the vegetables with a few turns of salt and pepper and cook until soft.
Throw in the garlic and cook for 1 more minute. Add the meat and juices back to the pot. Add the broth, tomatoes, bay leaves, cinnamon stick, chilies, cumin, and brown sugar. Stir well, cover and bring to a boil. Lower the temperature to medium low, partially cover with a lid and and simmer for about 2 - 2 1/2 hours or until the beef is tender.
Remove the cinnamon stick and bay leaves. Add the oregano, lime juice and cilantro. Check for salt and pepper and adjust to taste. Add more ground chiles for more heat if desired. Stir well and turn off heat.
Ladle chili into bowls and top with chopped red onions, green onions and cheddar cheese.

Now chili is a really complex recipe, there are a billion and one ways to make it and this is just ONE way, and the key to an award winning chili at home is to make it your own. That’s the key to any award winning recipe.
In this recipe we’re using
3 ½ lbs ground beef
½ onion
3 garlic cloves
4 tbs chili powder 3 Fiesta / 1 Gephart
2 tsp smoked paprika
¼ cup tomato paste
1 bell pepper
2 tsp cumin
½ tsp oregano
1 tsp cayenne pepper
1 TBS OG - add to taste at end
1 TBS WOW -add to taste at the end
3 Roma tomatoes
We’re also adding
Mirepiox
(thats ½ chopped onion, ¼ cup chopped carrots, ¼ cup chopped celery)
2 TSP Better than Bouillon or use beef broth in place of water
2 TBS masarina or flour to thicken if necessary or desired
Condiments at my house
Onions
cheese
Salsa verde to taste
Chili piquin to taste
Habanero to taste
Beans of your choice, yes i said beans haha
Now here is the biggest pro tip that the chili champs use – brown your meat over high heat before adding it to the dish. This will take your recipe to a whole other level of flavor nirvana.

We think this is the best Texas chili recipe and the internet seems to agree. In this recipe, we use the flat of a brisket for creating tender morsels of chili meat that doesn't come out tasting like pot roast.
This recipe is in the style of Texas barbecue restaurants and is a chili recipe with no beans.
It's a bit like a chile con carne recipe, but we slowly simmer these chunks of beef until they are one solid soup. In fact, you might find that using an immersion blender after the chili cooking gives you even more of a Texas quality chili. Just buzz it a few times to make it extra broken up and mixed well. :)
Ingredients Used:
• 4 slices thick cut bacon
• 3-4 lb. beef brisket, trimmed
• Kosher salt, pepper, onion powder – for liberally sprinkling on the meat while browning.
• 2 c. white onion, small diced (one large onion)
• 5 garlic cloves, pressed through a garlic press
• 1 T paprika
• 1 T. cumin powder
• 3 ½ T Texas chili powder, such as Mexene or Gebhardt’s
• ½ t. dried thyme
• ½ t. chipotle chile powder
• ½ t. salt
• 1 quart beef broth
• ½ c. strong black coffee (you can save this from your morning coffee)
• 28 oz. can whole tomatoes, in juice
