Apple Cheddar Pancakes with Crispy Bacon Recipe
Here’s a gourmet yet simple breakfast favourite featuring the sweet and savoury combination of apples, Cheddar and crispy bacon…which no one can resist!
Ingredients
3/4 cup (175mL) STIRLING - Churn 84 butter, melted and divided
1 cup (250mL) BLACK RIVER - Maple Cheddar Cheese, shredded
6 slices thick-cut bacon
4 apples, peeled, cored, halved and sliced
3/4 cup (175mL) maple syrup, divided
2 tsp (10mL) lemon juice
1/4 tsp (1mL) ground cinnamon
2 cups (500mL) all purpose flour
1 tbsp (15mL) granulated sugar
2 tsp (10mL) baking powder
1 tsp (5mL) baking soda
1/4 cup (50mL) walnuts, chopped and toasted
1 1/4 cups (300mL) buttermilk
2 eggs
1 tbsp (15mL) dried cherries
Instructions
1. In non-stick skillet, cook bacon over medium heat for 5 to 6 minutes or until browned and crisp. Transfer to paper towel–lined plate. Chop or crumble bacon and set aside.
2. Wipe out skillet; heat 1/4 cup (60 mL) butter in skillet set over medium heat; cook apples and 1/4 cup (60 mL) maple syrup for 7 to 8 minutes or until tender. Stir in lemon juice and cinnamon.
3. In large bowl, whisk together flour, sugar, baking powder and baking soda. Stir in walnuts, shredded cheese and bacon. In separate bowl, whisk together buttermilk, eggs and 1/4 cup (60 mL) of melted butter until blended; stir into flour mixture until just combined (batter will be lumpy). Transfer batter to measuring cup or pitcher with pourable spout.
4. Heat large skillet or griddle over medium heat; brush with some of the remaining butter. For each pancake, pour 1/4 cup (60 mL) batter into skillet, leaving space between each pancake. Cook, in batches, for 1 to 2 minutes or until bubbles form on surface. Flip over; cook for 1 to 2 minutes or until golden brown, wiping pan between batches and brushing with remaining butter as needed.
5. Hold pancakes in warm oven until ready to serve. Serve pancakes topped with sautéed apples, dried cherries and drizzle of remaining maple syrup.
*For added bacon flavour, double the amount of bacon.

FLUFFY PANCAKE RECIPE
Ingredients
1½ Cups | 190g Flour
4 Teaspoons Baking Powder
Pinch of Salt
2 Tablespoons Sugar (optional)
1 Egg
1¼ Cups | 310ml Milk
¼ Cup | 60g Melted Butter + more for cooking
½ Teaspoon Vanilla Essence
Instructions
In a large bowl mix together the flour, baking powder and salt with a wooden spoon. Set to the side.
In a smaller bowl crack in the egg and pour in the milk.
Add the melted butter and vanilla essence to the egg and milk and use a fork to mix together until everything is well combined.
Make a well in the dry ingredients and pour in the wet. Fold the batter together with a wooden spoon until there are no longer any large lumps.
To cook the pancakes heat a heavy based pan like cast iron over medium low heat. When the pan is hot add a small amount of butter and ⅓ cup of the pancakes batter.
Cook the pancake for 2-3 minutes each side. Repeat with remaining batter.
Serve the pancakes stacked high with butter and maple syrup. Enjoy.
Notes
You can add other flavourings to the pancakes such as blueberries or chocolate chips. Add the extra ingredients at the same time as you combine the wet and dry ingredients.

How to make German Pancakes:
German Cooking usually needs a lot of precision but in the case of making pancakes all Germans are kind of I go by my feeling. Well, in reality, it's more about experience. As a rule of thumb: If the first pancake is heavy and breaks apart easily into thick chunks, then you should add milk and maybe also eggs. If your German Pancake can't hold it's shape while trying to turn it and rips easily, you might want to add some flour. The way I make my German Pancake batter is, that I start with the wet ingredients and add the flour until it has the right consistency. #recipe #cook #food #how_to

Did you know that today is National Pancake Day? Any food as spectacular as a pancake deserves its own holiday! In celebration, I'm making a stack of sweetly tart buttermilk-apple pancakes. And the best news of all: This recipe relies on applesauce -- instead of lots of sugar -- to help create a deep fruit flavor, so it's healthier than the average flapjack you'd make from a mix. I can't think of a more fall-friendly (and delicious!) breakfast than this one, so grab your spatula and start cooking.
Sarah's Tip of the Day:
Make your batter better: Mix it the night before you plan on cooking your pancakes and let it rest in your fridge.

SERVINGS:4
INGREDIENTS
1 cup all-purpose flour (spooned and leveled)
1 tablespoon sugar
1 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon fine salt
1 cup buttermilk
1/2 cup applesauce
1 large egg
1 tablespoon unsalted butter, melted
Cooking spray
1 apple, peeled and diced small (1 cup)
DIRECTIONS
STEP 1
In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In a medium bowl, whisk together buttermilk, applesauce, egg, and butter. Add applesauce mixture to flour mixture and whisk until just moistened (batter should have some lumps; do not overmix).
STEP 2
Lightly coat a large nonstick skillet or griddle with cooking spray and heat over medium-high. In batches, drop batter by 1/4 cupfuls into skillet. Sprinkle each pancake with diced apple. Cook until bubbles appear on top and a few have burst, 2 to 5 minutes. Flip pancakes and cook until golden brown on underside, 2 to 5 minutes. Repeat with more cooking spray and remaining batter, wiping skillet clean between batches.
