1 x Salmon Mousse *** 1 x Red Wine Sauce ***
SALMON:
1 ea Salmon, baby, filet (@ 5- 1 tb Chives, chopped
6 oz), head, tail 1 c Wine, white :
and skin on 2 tb Puree, shallot 3 tb Caviar 1 ea Bay leaf
GARNISH:
Cucumber, sauteed, cut Chives, chopped -- into strings) Eggs, salmon Tomato, chopped Crayfish tails *** These recipes should be prepared before hand. For the Salmon: =============== Wash and salt and pepper the baby salmon. Pipe the salmon mousse into the inside of the salmon. Add a line of caviar inside of the salmon, then sprinkle with chives. Close the fish. In a saute pan, heat white wine. Add shallot puree and bay leaf. Place the fish in the saute pan (belly down) and bake in a 350 - 400 F oven for 2

INGREDIENTS :
1 puff pastry sheet
2 salmon darnes ( skinless )
80 grams baby spinach ( 2.82 oz )
65 grams chopped onion ( 2.29 oz )
100 grams cream cheese ( 3.52 oz )
25 grams butter ( 0.88 oz )
55 ml heavy cream ( 1.85 fl oz )
1 minced garlic clove
1 egg
1/8 teaspoon + extra ground black pepper
1/8 teaspoon + extra teaspoon salt
1/2 teaspoon dried chives
INSTRUCTIONS :
.in a pan on medium heat add 25 grams butter
.once melted add 65 grams chopped onion, cook for 1 to 2 minutes
.add 1 minced garlic clove, cook for 1 to 2 minutes
.add 100 grams cream cheese & mix well
.add 55 ml heavy cream, 1/8 teaspoon salt
.add 1/8 teaspoon ground black pepper, 1/2 teaspoon dried chives & mix well
.add 80 grams baby spinach, mix well & cook for 2 to 3 minutes
.vertically cut puff pastry sheet in half
.place 2 salmon darnes on 1 half of pastry sheet
.season with salt & pepper
.place spinach sauce on top of salmon
.beat 1 egg & brush on sides of pastry
.place other half of pastry sheet on top & press in
.roll in edges & fork down
.brush on egg wash
.score pastry with diagonal lines
.season with salt & pepper
.place in preheated oven 180 c / 356 f for 25 to 30 minutes

Cucumber & Cheese Rolls
Ingredients:
1 cucumber
100 grams vegan white cheese
finely chopped red bell pepper
fresh dill
Preparation
In a medium bowl, add in cheese & mash
Add in finely chopped bell pepper & dill
Stir all ingredients to combine.
Using a vegetable peeler or mandoline, peel the cucumbers lengthwise into thin slices.
Spread a small spoonful of filling over a cucumber slice.
Starting from one end, roll the cucumber into a spiral. Repeat with remaining cucumber slices and filling.
Cucumber Avocado Rolls
Ingredients
1 Avocado
½ of a lime
salt
black pepper
1 cucumber
1 medium-size carrot( finely slice into strips)
red & yellow bell pepper( finely slice into strips)
Instructions
Into a mixing bowl, add the avocado & lime juice.
Mash with a fork. Season with salt & pepper.
Use a mandoline or potato peeler to cut long thin strips from the cucumber. Take a cucumber strip and spread a thin coat of the avocado mixture along the length of the cucumber. Roll it up needed.
Do the same with the rest of your cucumber strips.
