How To make Bean Vegetable Medley
3 T Vegetable oil
1 x Large onion, diced
2 x Stalks celery, sliced
1 x Med. green pepper, *
2 x Med. tomatoes, diced
2 c Red kidney beans, drained **
1 pk Frozen baby lima beans,10 oz
1 c Quick cooking barley
2/3 c Chopped parsley
1 1/2 t Salt
1 t Dried basil leaves
1/4 t Ground black pepper
3 c Boiling water
2 T Grated Cheddar cheese
Tips: This dish can be assembled and baked later. Add the boiling water just before baking. Baking time should be increased by 15 minutes when starting refrigerated temperature. * Green pepper cut into strips. ** 15-1/2 oz. cans each. Heat oil in a large skillet. Add onion, celery, and green pepper. Cook slowly for 10 minutes. Do not brown. Stir in tomatoes, kidney beans, barley, parsley, salt, basil, and black pepper. Transfer mixture to a buttered 2-to 3 quart casserole with lid. Add boiling water. Cover. Bake at 350 degrees F for 1-1/2 hours or until barley is tender and liquid is absorbed. Sprinkle with grated cheese before serving. Good served with: Marinated, slightlt blanched mixed vegetables, hot French bread and butter. From: My Great Recipes

FOR THE SALAD
• 3 (15-ounce) cans beans, drained and rinsed or use 4 ½ cups cooked beans
• 1/2 medium onion, finely chopped (about 3/4 cup)
• 1 medium cucumber, finely chopped (about 2 cups)
• 3 tablespoons drained capers
• 1/2 cup (60 grams) finely chopped fresh parsley, see notes
• 3/4 teaspoon dried oregano, see notes
FOR THE DRESSING
• 1/4 cup (60 ml) red wine vinegar
• 1/4 cup (60 ml) extra-virgin olive oil
• 1 teaspoon Dijon mustard
• 1 to 2 teaspoons honey or maple syrup, optional
• 3/4 teaspoon fine sea salt, plus more to taste
• 1/4 teaspoon fresh ground black pepper

Wok Exercise. French beans vegetables medley.
Cooking in the wok offers many possibilities, and one of the most valuable is the ability to combine different ingredients into one dish. Over the years, I have learned that the greatest nutritional benefit in a diet is diversity in different food ingredients. This is particularly true when it comes to vegetable dishes. Quite often people cook with only one or two vegetables, because the time to prepare several different vegetables just for one dish seems untenable. Therefore, most people will only use one or two vegetables to cook a dish. Stir-frying multiple vegetables in the wok is simple but requires some planning. In this wok exercise, I stir-fry French beans with broccoli and bell peppers of different colors. French beans could be a challenge to stir-fry because they require long cook time. The approach is to stir-fry the French beans before adding the broccoli florets, which take about half the time to cook in comparison to the French beans. The bell peppers were added toward the end of the cooking section, because I want them to be lightly cooked to maintain their crisp texture. The end result is a dish where all the vegetables were cooked to the texture that I like. Vegetables play a critical role in a healthy diet, and the diversity of the vegetables offers nutritional balance and adequate nutritional fiber. However, most people do not enjoy vegetables and find them distasteful and monotonous. The solution in creating vegetable dishes that people could enjoy is to create dishes that are interesting in flavor and diverse in composition. This video is a demonstration of this approach.
