This video was filmed a few weeks ago, and while it feels empty to share a video in a difficult time such as this, we thought we could take this opportunity to continue the momentum to support Black lives and voices, to speak up for justice and equality, and to stand against racism and injustice of any kind.

Smoky Three-Bean Chili
(Makes 6-8 servings)
:::::INGREDIENTS:::::
= Spice Blend =
- 1 Tbsp chili powder
- 2 tsps ground cumin
- 11⁄2 tsps ground coriander
- 1 tsp ground chipotle powder
- 1⁄2 tsp dried oregano
= Chili =
- 1 Tbsp olive oil
- 1 medium yellow onion, chopped, about 1 cup
- 2 poblano or bell pepper, seeded and chopped in 1⁄2-inch pieces, about 1 cup
- 1 jalapeño pepper, seeds and veins removed, minced
- 4 cloves garlic, minced, about 11⁄2 Tbsps
- 1 large or 2 small sweet potatoes, peeled and cut into 1⁄2-inch pieces, about 11⁄2 cups
- 1 cup frozen corn, thawed
- 1 (15.5-ounce) can black beans, drained and rinsed (or 11⁄2 cups cooked)
- 1 (15.5-ounce) can kidney beans, drained and rinsed (or 11⁄2 cups cooked)
- 1 (15.5-ounce) can chickpeas, drained and rinsed (or 11⁄2 cups cooked)
- 1 (28-ounce) can tomato purée
- 11⁄2 cup vegetable broth or water
- 1 tsp salt, plus more to taste
- 1 Tbsp fresh lime juice
- Chopped cilantro, for garnish
- 1 lime, cut into wedges for serving
:::DIRECTIONS:::
1. To make the spice blend, mix together the chili powder, cumin, coriander, chipotle powder, and oregano in a small bowl. Set aside until needed.
2. To make the chili, heat the olive oil in a large pot over medium-high heat. Add the onion and a pinch of salt, and cook until it begins to soften, 4 to 5 minutes. Add the poblano and jalapeño peppers, and cook for an additional 3 to 4 minutes. Stir in the garlic and spice blend. Cook for an additional minute or two, until fragrant.
3. Stir in the sweet potato, corn, beans, tomatoes, broth, and salt. Bring to a boil. Reduce heat to low and cover. Simmer for 25 to 30 minutes, until the sweet potatoes are fork-tender. Add the lime juice, taste and adjust seasonings as desired. To service, garnish with cilantro and serve with lime wedges. The chili will keep in the refrigerator for five days. Cooled portions freeze beautifully and are best enjoyed within three months.

This easy and delicious Italian sausage vegan style is by far, the best sausage I have ever made, I only use simple and easy to find ingredients that's available probably worldwide and it is way, waaaaay better and much more affordable than the store-bought ones you see on the market.

EASY AND DELICIOUS ITALIAN SAUSAGE VEGAN STYLE
INGREDIENTS:
2 cups of TVP
3 tablespoons (or more) of vital wheat gluten flour
1/2 cup of vegetable oil
Salt to taste (approximately 2 shallow tablespoons)
1/2 cup of dry white wine
2 tablespoons of a mix of dried oregano, dried parsley, and dried rosemary
1 tablespoon of smoked paprika
1 teaspoon of red chili flakes
1/4 teaspoon of liquid smoke or to taste
1 teaspoon of onion powder
2 teaspoons of mushroom powder
1/2 tablespoon of garlic blend (recipe below) or 2 minced garlic cloves
1/4 teaspoon of black pepper
2 tablespoons of barbecue sauce
3 tablespoons of tomato paste
1 teaspoon of lemon juice (optional but recommended)
METHOD:
Pass the TVP through a sieve, discard the dust, transfer the TVP to a large bowl.
Add all the ingredients except for the vital wheat gluten flour.
Mix very well to combine.
Cover the bowl and let it rest for 30 to 40 minutes.
Add the vital wheat gluten flour to the mixture, stir to combine, then blend it very well using a hand blender or a food processor.
Shape the sausages, then shallow fry them on medium-low heat for about 5 to 7 minutes on each side.
