1 lb Sharp cheddar cheese 1/3 c Brandy 3 T Butter (room temp) 2 T Heavy cream 1 Dash nutmeg 1 Dash cayenne pepper Put the cheese through a meat grinder, food processor and etc. using the finest blade. Combine the cheese in a mixing bowl with all other ingredients. Mix well. Chill in the refrigerator. Remove from the refrigerator about a half-hour before serving so the cheese may be spread easily. A good bourbon may be substituted for brandy with excellent results. Makes about two cups.

Ingredients: 1 clove of garlic, 500g of grated gruyere cheese; 500g of grated emmental cheese; 5 tablespoons of cornstarch; 4 cups of dry white wine; 1/2 cup of brandy.
Way of doing: (1) Grate the 500g of Gruyere cheese and the 500g of Emmental cheese. (2) Cut off the garlic head and rub the cut part of the garlic on the inside of the fondue pot. (3) Add the white wine and brandy to the pot and light the heat. (4) Add the grated cheeses gradually, along with the cornstarch. (5) Stir the cheese until it melts.
This fondue is served with bread and cooked vegetables such as carrots and cauliflower.

Brandied Cheese Dip
An easy, do-ahead dip
Ingredients:
6 ounces cream cheese, room temperature
4 ounces bleu cheese, room temperature
2 tablespoons brandy
1/2 cup finely chopped pecans
2 tablespoons minced onion
Apples, sliced, and crackers
Directions:
In medium bowl, use electric hand mixer to beat together cream cheese and bleu cheese. Use a wooden spoon to stir in pecans and onion. Form cheese into a ball or pack into a crock or bowl and refrigerate for at least 3 hours. Let come to room temperature before serving. Good with apple slices and your favorite crackers. Sue's Tips:
Toss apple slices with lemon or orange juice to prevent them from turning brown.
