Super Healthy Brown Rice Quiche Cups - 3 ways ????????
Ham, Cheese & Mushroom:
Ingredients:
1 cup Spekko Saman Brown Rice
2 cups Water
Pinch of salt
½ cup ham, diced
¾ cup cheese, grated
¾ cup sliced & sautéed mushrooms
6 eggs, lightly beaten
½ cup milk
Salt & pepper
Sour cream
Chopped chives (optional)
Yield: 12 rice cups
Recipe:
1. Preheat oven to 170°C.
2. Grease a standard size muffin tray.
3. In a medium pot, add the Spekko Saman Brown Rice to 2 cups of salted water. Bring to the boil, cover & reduce the heat to a simmer. Allow to simmer for 20 – 25 minutes. Turn off the heat and allow the rice to sit covered for a further 10 – 15 minutes until you can fluff the rice with a fork. Allow to cool.
In a large bowl, combine the cooked brown rice with the ham, cheese & mushroom slices.
4. Divide this mixture equally in the muffin holes, filling to the top.
Combine the eggs, milk, salt & pepper & whisk well.
5. Pour over the rice mixture until muffin holes are filled.
6. Bake for 20-25 minutes.
7. Serve warm with a dollop of sour cream & chopped chives.
Tomato, Feta & Spinach:
Ingredients:
1 cup Spekko Saman Brown Rice
2 cups Water
Pinch of salt
½ cup cherry tomatoes, quartered
½ cup feta, crumbled
1 cup fresh spinach, chopped
6 eggs, lightly beaten
½ cup milk
Salt & pepper
Sour cream
Chopped chives (optional)
Yield: 12 rice cups
Recipe:

1 can shredded tuna, drained
½ can sweetcorn, drained
¼ cup spring onion, sliced
6 eggs, lightly beaten
½ cup milk
Salt & pepper
Sour cream
Chopped chives (optional)
Yield: 12 rice cups

As you noticed I make muffins pretty often as they are my kid's favourite. Today I went with a gluten-free option, which came out great!

INGREDIENTS
The recipe makes 11-12 muffins.
▪︎1 cup brown rice, soaked overnight
▪︎1 cup rolled oats, ground in a food processor or Vitamix
▪︎1 ripe banana
▪︎1 egg
▪︎1 tsp vanilla extract
▪︎1/4 cup coconut oil
▪︎1/2 cup maple syrup
▪︎1/2 cup yoghurt
▪︎1 tsp baking powder
▪︎1 tsp baking soda
▪︎1/2 tsp cinnamon
▪︎1/4 tsp cardamom
▪︎A pinch of salt
Let the batter sit for 30 minutes before baking.
Bake 5 min at 425F, then 30-40 mins at 350F.

90 g (¾ cup) rice flour

Broccoli Cheese & Rice Muffins
• 1 cup 4Sisters brown rice, cooked
• 4 large eggs, beaten
• 3 cups fresh broccoli florets, chopped
• ½ cup yellow onion, chopped
• ¾ cup sharp cheddar cheese, shredded
• ¾ cups cottage cheese
• 1 tsp. sea salt
• ½ tsp. black pepper
• 2 tbsp. unsalted butter
• ¼ tsp. garlic powder
Directions:
• Beat eggs in large mixing bowl. Stir in cooked brown rice, cottage cheese, cheddar cheese, garlic powder, onion, salt & pepper, to taste. Gently mix the broccoli into the cheesy rice mixture.
• Using a greased or paper lined, 12-cup muffin tin, spoon the broccoli rice mixture evenly into each cup.
• Bake at 350 degrees for about 25 minutes or until firm to touch in the center.
*Makes 12 muffins
**These can be frozen after baking.
