How To make Cardamom Kulfi Pops
1 1/2 qt Whole milk
1/3 c Sugar
3/4 ts Ground cardamom
8 Paper cups
-OR Cooking parchment -OR Waxed paper 8 Ice cream sticks (opt)
In a 6-8 quart pan over high heat, stir milk, sugar, and cardamom until simmering. Over medium-high heat, boil until reduced to 2 cups, 25-35 minutes, stirring often; slide pan partially off heat if milk threaten to boil over. Let cool; to speed cooling, set pan in ice water. Set paper cups in a rimmed pan. Or, to make cones, cut 8 pieces of parchment or waxed paper into 7-1/2" squares. Fold each piece in half to make a triangle. With long edge toward you, bring 1 of the 45' angles to the top of the triangle, then roll toward other angle. To close hole at bottom, starting from the top, press 1 inside sheet to tyhe opposite side. Tape the cone in a few places to hold it together. Support each cone, pointed end down, in a cup slightly taller than the cone; set cups in a rimmed pan. Divide milk mixture among cups or cones. Freeze until kulfi is thick but not hard, 1 to 1-1/2 hours; then, if desired, push an ice cream stick into each container. Freeze until firm, about 2 hours longer. To eat, peel off paper. To store, seal kjulfi (still in cups or cones) in a parge plastic bag; freeze for up to 2 weeks. Per serving: 144 calories; 6 grams protein; 6.1 grams fat; (3.8 grams saturated fat); 17 grams carbohydrates; 90 milligrams sodium; 26 milligrams cholesterol.

Cardamom Saffron Kulfi

Servings: 6
Ingredients
2 cups heavy whipping cream
1 (14Oz) can sweetened condensed milk
2 tablespoons milk
1 teaspoon saffron strands
1 teaspoon cardamom powder
2 tablespoons almonds, finely chopped
2 tablespoons pistachios, finely chopped
4 sheets edible silver leaf, to garnish
2 tablespoons rose petals, to garnish
2 tablespoons mixed nuts, sliced, to garnish
Directions
1. In a large bowl add the heavy whipping cream and beat on a medium speed for 4-5 minutes until soft peaks are formed.
2. Add in the condensed milk and beat for a minute until well combined.
3. In a small bowl combine milk and saffron strands and microwave for 30 seconds and let it sit for 5 minutes until the milk turns a bright yellow color.
4. Add the saffron milk to the heavy cream mixture and mix with the spatula.
5. Stir in the cardamom powder, almonds, and pistachios. Mix until well combined.
6. Pour the prepared kulfi mixture into the popsicle molds or paper cups and freeze for 6 hours to overnight.
7. Once done, remove the kulfi’s from the mold and garnish with edible silver leaf, rose petals and nuts to serve.

Ingredients:
8 oz Starbucks® Pike Place® Roast K-Cup® pod (2 K-Cup® pods brewed at 4 oz each)
1/2 cup blanched almonds
2 cups whole milk, divided
8 oz heavy cream
8 oz condensed milk
1/2 tsp ground cardamom
Pinch of salt
Chopped pistachios, for garnish (optional)
Let’s Get Cooking:
1.) In a blender, blend almonds with 4 oz of whole milk until a smooth paste is formed.
2.) Add the remainder of the whole milk and the heavy cream to a saucepan on medium heat. Simmer for 15 minutes, stirring frequently until slightly reduced.
3.) Remove from heat and whisk in condensed milk, coffee, cardamom, and salt.
4.) Add a little bit of warm milk mixture to the almond paste and blend until smooth. Add remaining milk mixture to the blender and set aside and allow to completely cool.
5.) Fill ice pop molds 3/4 full with cooled kulfi base. Place popsicle sticks in the middle of each mold and freeze overnight until solid.
6.) To unmold, either leave the kulfi on the counter for a few minutes, or dip molds in warm water quickly
to release pops. Roll the popsicles in chopped pistachios if desired. Enjoy!
