How to make a Healthy Carrot Cake
• Carrot Cake:
• 4 egg whites
• 2 whole eggs
• 1/3 cup of canola oil
• 1/3 cup of unsweetened applesauce
• 1 cup of apple juice concentrate
• 1/4 cup of water
• 3 cups of whole wheat grain flour
• 1 tablespoon of baking powder
• 1 teaspoon of baking soda
• 1 cup of raisins
• 1 teaspoon of salt
• 2 tablespoons of ground cinnamon
• 1/4 teaspoon of grated nutmeg
• 2 1/2 cups of fresh grated carrots
• Sugar free cream cheese frosting for the cake:
• 1 1/2 cups of cream cheese at room temperature
• 1 1/2 teaspoons of butter
• 1 cup of splenda
• 2 teaspoons of vanilla extract
Directions
1. Carrot Cake:
2. Preheat the oven to 350F.
3. Beat the egg whites until soft peaks are formed and it doubles in volume.
4. Break in the eggs, one by one, and beat well.
5. Add the apple sauce, apple juice, oil and water and blend the mix well so that everything is well incorporated.
6. In a bowl, sift together the whole wheat flour, baking powder, baking soda, salt, ground cinnamon and grated nutmeg.
7. Add the dry ingredients to the wet egg apple mix and blend well.
8. Stir in the grated carrots, add the raisins, and mix well.
9. Grease two 9-inch baking pans and pour the batter in the two pans equally. Smooth the tops.
10. Bake in the oven at 350F for about 25-30 minutes and then again at 325F for about 10-12 minutes.
11. Remove and cool on a wire rack before serving or applying frosting.
12. Sugar free cream cheese frosting for the cake:
13. Beat the Splenda in a mixer to get a fine sugar mix.
14. Add the cream cheese and butter to the mix and beat well to get a smooth mix.
15. Mix in the vanilla extract.

Baking A Carrot Cake With Easy Candied Curls | Dessert Recipes | Jock Zonfrillo
Here's another one of my super easy, dessert recipes! (You're welcome). Here's my carrot cake with candied curls - even if you stuff this up, I've got a sneaky trick for making this still look good!

???????? INGREDIENTS:
For the Carrot Cake:
• 3 Egg yolks
• 180g Brown Sugar
• 32g Walnuts, roughly chopped
• 55g Raisins
• 130g Carrot (about one large), grated on the coarse side of a box grater.
• 140g Plain flour
• 3g Cinnamon powder
• 3g Baking soda
• 3g Baking powder
• 100g Grapeseed Oil
For the cream cheese icing:
• 100g Icing sugar, sifted
• 140g Unsalted butter, at room temp
• 350g Cream cheese, at room temp
• 25g Honey
• 5g Vanilla paste
• 20g Lemon juice
???????? METHOD:
For the cake, grease and line a 21cm springform cake tin. Preheat oven to 160C.
In the bowl of a stand mixer fitted with a whisk, cream the eggs and sugar on high speed until pale and thick enough that the mixture falls in ribbons from the whisk, about five minutes.
Remove the bowl from the mixer and fold in the walnuts, raisins and carrot by hand. In another bowl, whisk to combine all the dry ingredients, then gently fold into the cake batter. Gradually fold in the grapeseed oil.
Pour the finished batter into a baking tin and bake for 60 minutes, rotating halfway, or until a wooden skewer inserted in the batter comes out clean. Allow the cake to cool to room temperature before icing.
For the cream cheese icing, combine all ingredients in a bowl with a spatula or in a stand mixer fitted with a paddle attachment. Pass through a fine sieve if you wish to ensure it is extra smooth. Allow the cake to cool to room temperature before icing.
For the candied carrot, use a mandolin to slice the carrot lengthways as thinly as possible. Cut each slice in half lengthways with a knife.
Dissolve the sugar and water in a pot over medium heat, then add carrots and simmer until tender and translucent, about 15 minutes. Strain.
Line an oven tray with baking paper and lightly spray the surface with baking spray. Place carrot slices on the tray and cook at 100 degrees for 20 minutes. Working one at a time, remove the slices from the oven and coil tightly around a chopstick. Allow to stand until the coil shape sets, then carefully remove from the chopstick. Repeat with remaining carrot slices. Leave everything to cool fully at room temperature until crisp, about 30 minutes.
To assemble, slice the cooled cake through the centre. Spread half the icing on the bottom layer, cover with the top layer of cake and repeat with the remaining icing. Cover with as many candied carrot coils as you possibly can!

All purpose flour - 1 tbsp
Egg - 2
Sugar - ½ cup (100 g)
Butter(melted) - ⅓ cup (80 ml)
Yogurt - ½ cup (120 g)
Vanilla extract - 1 tsp
All purpose flour - 1 ¼ cup (160 g)
Baking powder - 1 ½ tsp (6 g)
Salt - ¼ tsp
Pan size : 20 x 10 x 7centimetres
Bake in preheated oven (180°C) for 35 - 40 mins

Ingredients:
100 grams All purpose flour
2 grams Baking powder
100 grams Butter
100 grams Carrot (grated)
3 number Egg (medium size)
100 grams Sugar powder
2 tsp Vanilla essence
100 grams Walnuts
Directions:
Take a bowl add butter, icing sugar (sugar powder), cream it and add vanilla essence, egg, mix this well, take another bowl add all purpose flour, baking powder, walnuts, carrot grated, mix this with the flour, this one add to the butter mixture and mix it well and transfer into the baking tray and put the walnuts on the top of the cake and bake them at 200 c for 20 to 25 minutes. After that sprinkle some icing sugar and cut them into slices.
