GLUTEN FREE CARROT CAKE RECIPE
1 cup grated carrots
1/2 cup blanched almond flour
1/4 cup coconut flour
2 tablespoons tapioca flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
1 teaspoon cinnamon
1/8th teaspoon all spice
3 eggs
1/3 cup coconut oil melted
1/3 cup maple syrup
1 teaspoon vanilla extract
1/4 cup raisins
1/4 cup chopped walnuts
3/4 cup plain Greek yogurt
1/4 whipped cream cheese
1 tablespoon maple syrup
INSTRUCTIONS
Preheat the oven to 350 degrees F. Grease a 8x8 baking dish with coconut oil, butter, or cooking spray.
Grate carrots using the large holes on a box grater, set aside.
In a large bowl combine almond flour, coconut flour, tapioca flour, baking soda, salt, cinnamon and all spice. Gently toss everything together.
In a separate bowl combine eggs, coconut oil, maple syrup and vanilla extract. Whisk until well combined.
Add the wet ingredients to the dry and mix until all of the ingredients are just incorporated.
Stir in raisins, carrots and walnuts. Transfer batter to greased pan and pop in the oven for 30 minutes or until cooked through. Cool completely.
Combine yogurt, cream cheese and maple syrup in a medium sized bowl and mix well with a hand mixer. Be sure to get out all the lumps and bumps, mixing until you have a smooth creamy icing.
Spoon over the top of the cooled carrot cake and spread into an even layer. Serve and enjoy!

Ingredients:
-Carrot (shredded) 100 gr
-Roughly chopped walnuts 30 gr
-Raisins 30 gr
-Hot Cake Mix flour (store bought pancake flour) 100 gr
-Unsalted butter 100 gr
-Brown sugar 80 gr
-Egg 1
-Plain yogurt or greek yogurt or sour cream 30 gr
-Cinnamon powder 1/2 tsp
-Ground Cloves 1/4 tsp
-Vanilla essence 1/2 tsp
Frosting (In room temperature) :
-Cream cheese 100 gr
-Unsalted butter 25 gr
-Sugar 25 gr
-Vanilla essence 1/4 tsp
Methods:
1.Gather all the ingredients.
2.Preheat oven to 170°C. Grease your baking pan with butter & line with parchment paper.
3.In a microwave safe bowl, add butter & microwave at 600 W for about 30 sec. Whisk until it’s melted. Add brown sugar, egg, yogurt, vanilla essence, cinnamon powder, ground cloves, & flour. Mix until combined & stir in carrot, raisins & walnuts. Pour into prepared pan.4.Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack & cool completely.
5.To Make Frosting: In a medium bowl, combine cream cheese, butter, sugar & vanilla essence. Mix until combined. Place in refrigerator until cake is cool completely.
6. Frost the top of the carrot cake use a butter knife or small spatula the frosting around. Enjoy.
Tips:
-Store in refrigerator. You can eat it deliciously even when it's cold.
-Carrot cake is also a great choice for birthday cake.
