Chicken Adobo with Coconut Milk Recipe - Spicy Chicken Adobo with a twist of coconut milk flavor. We love this version, hope you'll love it too. Bon appetit. All ingredients are optional, modify as per your liking. Take everything in moderation. Health is Wealth.
Chicken Adobo with Coconut Milk Recipe
Ingredients:
3 tbsp olive oil
1200 grams - whole chicken legs
2 tbsp - used oil (remove excess oil)
1/3 cup - garlic
1 cup - shallots
2 tbsp - spicy chilis
4 tbsp - vinegar
3 tbsp - soy sauce
1 tsp - ground pepper
3 pcs - bay leaves
400 ml - coconut milk
2 cups - water
1 tsp - chicken powder
1 tsp - sugar
5 pcs - spicy chilis for garnish
Cooking Time: Approximately 50 minutes

This recipe is my version Chicken adobo with Coconut milk . It is similar to Filipino Chicken Adobo except I added coconut milk (Gata). Chicken Adobo with Coconut milk is not only tasty but also every mouthful of ii is definitely flavorful, rich and creamy. My family really like this recipe. Hope you enjoy this recipe as well. *** Chicken Adobo with Coconut Milk / Adobo sa Gata ***
6 - 8 pcs. chicken thigh
1/2 cup vinegar ( distilled white vinegar ,sugar cane vinegar ,apple cider vinegar)
1/2 cup soy sauce
1/2 Tbsp pepper corn ( 1/4 whole and 1/4 crusted)
1 medium size onion
5 pieces bay leaves
8-10 cloves , crushed
2 cups coconut milk
1/2 red bell pepper
chopped parsley for garnish ,optional
Ginger root ,lemon juice or calamanse juice can be added if you like
Ingredients can be adjusted base on your taste and preference

Step by step guide on How to cook chicken adobo sa gata.
INGREDIENTS:
1kl. Chicken
1/2 cup soysauce
1/4 cup vinegar
1/2 tsp. Black pepper
3 cloves garlic, chopped
1 whole onion, chopped
1 cup coconut milk
3-5 pcs. cayenne/chili pepper/siling labuyo
2 pcs. dried bay leaves
PROCEDURE:
Medium Heat Setting:
In a Casserole, mix chicken, salt,soysauce, garlic,onion and vinegar.
Then reduce the heat and let the chicken soften.
Pour the coconut milk & chili pepper.
Cook until the sauce is thickens.
Our chicken adobo is done! and turn off the heat.

How to Make Chicken Adobo with Coconut Milk
✅Ingredients
3 pounds bone-in chicken, cut into serving parts
1 onion, peeled and sliced thinly
1 head garlic, peeled and minced
1/2 teaspoon peppercorns
2 bay leaves
1 cup water
1/2 cup vinegar
1/4 cup soy sauce
1 tablespoon canola oil
1 cup coconut milk
2 Thai chili peppers, stemmed and chopped
salt to taste
✅Instructions
In a pot over medium heat, combine chicken, onions, garlic, peppercorns, bay leaves, water, vinegar, and soy sauce. Bring to a boil for about 5 minutes, skimming scum that floats on top.
Lower heat, cover, and simmer for about 30 to 40 minutes or until meat is tender. Drain meat. Reserve the aromatics and one cup of the liquid.
In a wide pan over medium heat, heat oil. Add meat and aromatics and cook, stirring occasionally, until lightly browned.
Add reserved liquid, coconut milk, and chili peppers. Lower heat, cover, and continue to cook for about 15 to 20 minutes or until meat is completely cooked and sauce is reduced and thickened.
Season with salt to taste. Serve hot.
