How To make Chicken Breasts with Curried Stuffing
1/2 c Shredded Carrot
1/4 c Sliced Green Onion
1 ts Curry powder (or less)
1 tb Margarine
1/2 c Soft Bread Crumbs
2 tb Raisins
1 tb Water
4 x Med Chicken Breast Halves *
1/8 ts Salt
1/4 ts Paprika
1/4 c Low-fat Plain Yogurt
2 ts Orange marmalade
* 4 med (12 oz total) boned skinless chicken breast halves In a small saucepan cook carrot, green onion, and curry powder in margarine till vegetables are tender. Remove from heat and stir in bread crumbs, raisins, and water. Place 1 chicken breast half, boned side up, between 2 pieces of clear plastic wrap. Working from the center to the edges, pound lightly with a meat mallet to 1/4" thickness. Remove plastic wrap. Repeat with remaining chicken. Sprinkle chicken pieces lightly with salt. Place 1/4 of the stuffing mixture on 1/2 of each chicken breast. Fold the other half of the chicken breast over the filling. Secure with a toothpick. Place chicken in an 8x8x2" baking dish. Sprinkle with paprika. Bake, covered, 350 deg F, for about 25 minutes or till chicken is tender and no longer pink. Meanwhile, combine yogurt and marmalade. To serve, dollop about 1 Tbspn yogurt mixture atop each piece of chicken. ************************************************************ Per serving: 223 calories, 28 g protein, 12 g carbohydrates, 6 g fat, 73 mg cholesterol, 209 mg sodium, 363 mg potassium.

Ingredients:
900g (2 pounds) chicken breast, cut into cubes
2 onions
3 garlic cloves
1 tablespoon grated ginger
3 tablespoons vegetable oil
2 tablespoon curry powder
1.5 teaspoons salt
1/2 teaspoon black pepper
4 large tomatoes, chopped
1 can (400g/14oz) coconut cream/milk
½ teaspoon garam masala (optional)
Coriander, chopped – for garnish
Directions:
1. In a large pan heat oil. Add chopped onions and sauté until golden, over medium-low heat. stir occasionally.
2. When onions are golden add grated garlic and ginger. Stir and cook for 2 minutes. Add chopped tomatoes and cook, stirring occasionally, until soft. Add curry powder and cook, stirring, for 2 minutes. Add chicken breast, season with salt and pepper, cook for 5 minutes, until golden. Cover the pan and cook for 2-3 minutes more. Add water, cover and cook 10 minutes.
3. Add coconut milk/cream, season with garam masala and salt, stir, and cook until lightly thickens.

An amazingly delicious chicken recipe that you can make for parties and get-togethers, Baked stuff chicken is made by stuffing cottage cheese, spinach and grated cheese into the chicken breasts. Try making this creamy chicken at home and share your feedback in the comments below.

Ingredients:
2 Chicken Breasts
1 tbsp Curd
1 tsp Chilli powder
1 tsp Tandoori masala
1 tsp Garlic powder
Salt to taste
100 gms Pureed Cottage cheese
2 cubes Grated cheese
8 cloves Garlic cloves, finely chopped
1 cup Fresh spinach, finely chopped
1 tsp Red chilli flakes
¼ cup Melted butter
1 tbsp Coriander, finely chopped
Method:
Preheat oven to 180°C.
In a small bowl, take curd, chilli powder, tandoori masala, garlic powder, salt and mix.
On a cutting board, take the chicken breasts and slit in the middle. Make small gashes on top and bottom sides of the chicken breast.
Rub the curd mixture everywhere on the chicken breast. Set aside for marinating.
In another bowl, take pureed cottage cheese, grated cheese, half of the garlic cloves, fresh spinach, red chilli flakes, salt and mix well.
Spoon this mixture into each chicken breast evenly. Take care to press down the sides of the chicken breast.
Place the chicken breasts in a baking tray.
In a small bowl, take the melted butter and add the remaining garlic cloves and coriander to it. Mix and put on top of each chicken breast.
Bake for 20-25 minutes or until chicken is easily pierced with a fork.
To puree cottage cheese, blend it in a mixer using as little water as possible.

water - 600 ml (20.3 fl oz)
TO BOIL 10 min
eggs - 2 pieces
milk - 100 ml (3.4 fl oz)
salt - 6 g (0.21 oz)
flour - 40 g (1.4 oz)
baking powder - 7 g (0.25 oz)
mozzarella - 100 g (3.5 oz)
oregano - 3 g (0.11 oz)

IN THE OVEN 180 °C (356 °F)/25 minutes
