How To make Chocolate Covered Cherries
60 Marachino cherries,w/stem
3 tb Butter or margarine,softened
3 tb Light corn syrup
1/4 ts Salt
2 c Confectioner's sugar, sifted
1 1/2 lb Dipping chocolate or white
-chocolate ( for coating) Drain marachino cherries thoroughly, Place on paper toweling. Combine butter or margarine, corn syrup and salt. Stir in sifted confectioner's sugar. Knead sugar mixture until smooth ( chill if mixture is too soft.) Shape 1 teaspoon of the sugar mixture around each cherry. Place on a waxed-paper-lined baking sheet, chill. In a small, heavy saucepan, melt chocolate, stirring constantly. DO NOT ADD ANY LIQUID! Holding cherries by stems, dip one at a time into chocolate. Spoon chocolate over cherries to coat. Chill until chocolate is hardened. Store candy in a covered container in a cool place. Let candies ripen a week or two. makes 60 chocolate-covered cherries.

Ingredients:
⅓ cup soft butter, not margarine
⅓ cup light corn syrup
½ tsp vanilla
½ tsp salt
4 cups confectioners' sugar, sifted and divided
1 lb (jar) red maraschino cherries, with stems, well-drained
16 oz dark chocolate candy bars, cut up

0:09 Using an electric mixer, beat together the butter, corn syrup, and vanilla at medium speed until smooth.
0:17 Gradually add the salt and 3 cups of the confectioners' sugar. Mix well.
0:23 When the mixture becomes too stiff to beat, stir with a spatula.
0:27 Add the remaining confectioners' sugar enough to make a mixture that can be kneaded.
0:31 Form mixture into a 10-inch roll. Place on a parchment paper-lined baking sheet and cover in plastic wrap or waxed paper.
0:37 Refrigerate the roll until firm.
0:41 Dust the working area with flour then cut the roll into 1-inch slices.
0:45 Then, cut each slice into quarters.
0:49 Flatten each piece in the palm of your hand then place a cherry in the center.
0:54 Fold up the fondant around the cherry until it is completely covered.
0:57 Place on a parchment paper-lined baking sheet. Chill until firm.
1:02 Melt the dark chocolate on top of a double boiler over hot water. Cool slightly.
1:12 Dip fondant-covered cherries in the melted milk chocolate.
1:15 Place on the parchment paper-lined baking sheets.
1:17 Refrigerate until the chocolate sets then serve!

3 Christmas Candies. Peanut Butter Buckeyes. Coconut Bon Bons, Chocolate Covered Cherries
These Christmas Candies are three of my favorites and make wonderful gifts! I have been making them for years and they always satisfy my sweet tooth. Packaged in a pretty box these candies are the perfect homemade treat for family and friends. The Peanut Butter Buckeyes are smooth and creamy and coated in chocolate. The Coconut Bon Bons are sweet and chewy with a crunch of the almonds and coated with chocolate. The Chocolate Covered Cherries are a perfect combination of sweet cherries wrapped in a fondant and dipped in chocolate.
The Buckeye recipe below is the correct recipe. I made a mistake in my video.
Peanut Butter Buckeyes
Ingredients
1/2 pound butter
2 cups peanut butter
5 1/2 cups powdered sugar
1 tsp vanilla
chocolate almond bark or any dipping chocolate
Instructions
Mix butter and peanut butter until well blended. Add sugar and vanilla. Mix thoroughly. Roll into 1 inch balls. Chill while making dip.
Melt chocolate in a double boiler until smooth. Put chilled balls on a toothpick and dip into chocolate to almost cover. Place on parchment paper and chill. Keep refrigerated until serving.
Coconut Bon Bons
Ingredients
1 14oz can sweetened condensed milk
2 1/2 sticks of butter
2 cups powdered sugar
2 cup chopped almonds (you can use walnuts or pecans also)
2 14oz bags of sweetened flaked coconut
chocolate almond bark or any dipping chocolate
Instructions
Mix all ingredients together and chill in refrigerator for at least 2 hours or overnight. Form into balls and dip into chocolate.
Chocolate Covered Cherries
Ingredients
1 10oz jar of maraschino cherries
1 Tbsp liquid from cherries
1 tsp corn syrup
2 Tbsp butter
1 1/2 cup powdered sugar
Instructions
Mix together the liquid from cherries, corn syrup, butter, and powdered sugar. Mixture will be a thick and stiff fondant. Drain the rest of the liquid from the cherries. Take 1 tsp of fondant and press in your fingers to make a disc. Place a cherry in the center of disc and wrap around the cherry. Then roll into a ball. Place the wrapped and rolled cherries in the freezer for 30 minutes to an hour. Dip into chocolate.
