The Best Fudgy Brownies
Servings: 9
INGREDIENTS
8 ounces good-quality chocolate
¾ cup butter, melted
1¼ cups sugar
2 eggs
2 teaspoons vanilla
¾ cup all-purpose flour
¼ cup cocoa powder
1 teaspoon salt
PREPARATION
Preheat oven to 350°F/180°C.
Chop the chocolate into chunks. Melt half, then save the other half for later.
Mix the butter and the sugar, then beat in the eggs and vanilla for 1-2 minutes until the mixture has become fluffy and light in color.
Whisk in the reserved melted chocolate (make sure the chocolate is not too hot or else the eggs will cook), then sift in the flour, cocoa powder, and salt.
Fold the dry ingredients into the wet ingredients, being careful not to overmix as this will cause the brownies to be more cake-like in texture.
Fold in the chocolate chunks, then transfer the batter into a parchment paper-lined square baking dish.
Bake for 20-25 minutes, depending on how fudgy you like your brownies, then cool completely.
Slice, then serve with a nice cold glass of milk!

Double Chocolate Brownies Recipe
This is the best brownie recipe I have made so far, rich and delicious with a crunchy top and soft interior. The best part is when you feel the melted chopped chocolate...just DIVINE.
Ingredients
Makes about 9 servings
3/4 cup (90 g) dark chocolate (55%-70%), for melting
3/4 cup (90 g) dark chocolate ((55%-70%)), chopped
3/4 cup (170 g) butter
1 tsp instant espresso powder
1 tbsp dark cocoa powder
1 cup sugar (200g)
1/2 tsp salt
3 eggs
1 tsp vanilla extract
3/4 cup flour (95g)
Directions
1. Preheat oven to 350 degrees F (180 C). Butter the sides and bottom of a 8x8 inch (20 X 20 cm) baking pan. Line the pan with parchment paper.
2. Melt the chocolate and butter in a medium bowl, over bain-marie, stirring occasionally, until smooth. Add cappuccino powder. Remove the pan from heat but keep the bowl over the water and stir in the sugar, then remove the bowl from the pan.
3. Incorporate the eggs one at a time into the mixture and whisk until well combined. Stir in the vanilla extract then add the flour, salt, cocoa powder and stir well. Stir in the chopped chocolate.
4. Pour the batter into the prepared pan and bake for about 30-40 minutes until a toothpick inserted in the center comes out with a few moist crumbs sticking to it.
5. Let the brownies cool completely, then carefully lift the parchment out of the baking pan. Cut into squares and serve.

Ingredients
Salt Roasted Pecans
- 1 Tbsp (15 g) unsalted butter
- 1 cup (100 g) pecan halves
- ½ tsp (3 g) sea salt
Brownies
- 4 oz (115 g) unsweetened chocolate, chopped
- 1 ¼ cup (285 g) unsalted butter, cut into pieces
- 1 cup (200 g) granulated sugar
- ¾ cup (150 g) packed light brown sugar
- 3 large eggs, room temperature
- 2 tsp (10 ml) vanilla extract
- 1 cup (150 g) all-purpose flour
- ¼ cup (30 g) Dutch process cocoa powder
Directions

1. Preheat the oven to 350ºF (180ºC) and grease a 12-square brownie pan or 8-inch square pan.
2. For the salt roasted pecans, melt the butter in a sauté pan over medium heat and add the pecans and salt. Stir and toast the pecans for about 8 minutes, until the pecans have a pleasant nutty aroma (the salt will not dissolve, but adds a nice crunch). Remove the pan from the heat and cool while preparing the brownies.
Brownies
1. Melt the chocolate and butter in a medium sauce pot over medium-low heat, stirring until melted. Remove the pan from the heat and whisk in the sugar and brown sugar right into the pot. Whisk in the eggs one at a time, then whisk in the vanilla. Stir in the flour and cocoa powder until evenly combined.
2. Count out 12 pecan halves and set aside. Roughly chop the remaining pecans and stir them into the brownie batter. Divide the batter into the bar pan, or spread into the 8-inch pan and arrange the reserved pecan halves on top. Bake for about 20 minutes, until the tops of the brownies lose their shine. If baking in an 8- inch pan, bake an additional 5 minutes. Cool the brownies for an hour before removing from the tin (and slicing, if baking in a larger pan).
3. The brownies will keep in an airtight container for up to 5 days, and the brownies actually improve after a day.

In fact, I prefer this version because it's so, so chocolaty and the texture is fabulous -- fudgy with a shiny, crackly top and a nice crumb. Best of all, you don't need any special gluten-free flour; ordinary cornstarch stands in.
