How To make Cold Orzo Salad with Shrimp
2 c Raw orzo
- cooked until tender - and drained 10 oz Frozen tiny peas
- quickly cooked & drained 8 oz Pitted black olives
- thinly sliced 2 lg Red bell peppers
- seeds & membranes removed - finely chopped 3/4 lb Med-small shrimp; peeled,
- deveined and cooked, - cut into thirds - (remove a few whole - for garnish) 1 md Red onion
- peeled and finely chopped 1/2 c Minced flat-leaf parsley
3/4 c Extra virgin olive oil
5 tb Red wine vinegar
1/2 Garlic clove
- peeled and minced Salt Freshly ground black pepper Cherry tomatoes; for garnish Olive slices; for garnish IN A LARGE MIXING BOWL, toss together the orzo, peas, olives, peppers, shrimp, onion and parsley. Pour the olive oil over the salad and mix well. Add the vinegar, garlic, salt and pepper and taste to adjust the seasonings, adding more vinegar or oil sparingly as needed. Don't make the salad too moist. Spoon the mixture into a mixing bowl just large enough to hold the salad, packing it down slightly, cover and chill thoroughly. Unmold the salad onto a serving platter and garnish with cherry tomatoes and black olives. Split the reserved shrimp in half lengthwise and place them on the top for decoration.

⭐️ Ingredients
FOR THE SALAD
1½ cups (225 grams) orzo pasta or ½ pound
1 can (15 oz) (230 grams) chickpeas or 1½ cups cooked chickpeas
1½ cups (240 grams) cherry tomatoes quartered
1½ cups (210 grams) cucumber diced
½ cup (60 grams) olives sliced
⅓ cup (30 grams) red onion chopped
⅓ cup (10 grams) parsley chopped
2 ounces (60 grams) feta, or non-dairy feta
FOR THE DRESSING
4 tablespoons (55 grams) extra virgin olive oil
2 tablespoons (30 grams) fresh lemon juice + the zest of ½ lemon
1 tablespoon (15 grams) mustard
1 tablespoon (15 grams) maple syrup or honey
¾ teaspoon salt
¼ teaspoon black pepper

This Mediterranean Orzo Salad is fantastic served as a side dish with roasted or grilled chicken, steak or fish. The dressing really brings out the beautiful fresh flavors of this pasta salad. Enjoy!
Mediterranean Orzo Salad (serves 8-10 people as a side dish)
-1 lb (16oz) orzo pasta
-1 pint (10oz) grape tomatoes (275g), halved
-1/2 cup kalamata olives (90g), pitted and halved
-1 (4oz) container crumbled feta cheese
-1/2 cup Italian flat leaf parsley (15g), chopped
-3 tablespoons capers (22.5g), with juice
-1/2 of a small red onion, diced (optional)
Dressing:
-1/4 cup fresh lemon juice (57.5g)
-1 clove garlic
-1 tablespoon honey (21g)
-1/4 teaspoon salt (1.5g)
-1/8 teaspoon ground pepper (0.3g)
-1/2 cup extra virgin olive oil (65g)

You can also substitute the shrimp out for some grilled chicken as well! This dish is so easy yet the flavors make it taste like you slaved over that stove for hours! Ingredients:
1 Cup Whole Wheat Orzo
1/3 Cup Grated Parmesan Cheese
5 Tsp Pesto
2 Cups Grape Tomatoes, Halved
1 Pound Peeled and Deveined Jumbo Shrimp
2 Tbsp Lemon Juice
Black Pepper
Garlic Powder
Directions:
1. Bring water to a boil in a medium size sauce pan. Add orzo pasta. Drain.
2. In a small sauté pan, add 1 tbsp olive oil and halved grape tomatoes. Cook about 2 minutes. Add to orzo pasta.
3. Add parmesan cheese, pesto and lemon juice to orzo pasta. Mix.
4. In a large saute pan, add 3 tbsp olive oil on high heat and wait until pan in very hot. Add shrimp and season with black pepper and garlic powder. Cook about 2 minutes and flip shrimp. Cook 2 mins and flip once more. When shrimp begin to brown on edges they are done. About 6 minutes total.
5. In a bowl, scoop about 1 1/2 cups of orzo mixture and add 6-7 pieces of shrimp.
6. Top with a little more parmesan cheese and enjoy!
Serves 3
