* 2 TB Dark rum 1 ea Juice of one lime 1 1/2 TB Honey 1 ea Garlic clove :
crushed 1/8 ts Salt 1 TB Coriander seeds 1/2 ts Black peppercorns * Cut in half lengthwise Wash hens and pat dry. Mix together rum, lime juice, honey, garlic, and salt. Rub mixture all over hens and marinate at least 30 minutes. Coarsely crush coriander seeds and peppercorns together with a mortar and pestle. Remove hens from marinade, reserving the marinade. Press crushed coriander seeds and peppercorns into skin side of hens. Grill over hot coals for 20 - 25 minutes, turning frequently and basting with reserved marinade. Recipe By : -----

Hi and welcome back! Today I made for you my version of Guava rum glazed cornish hens! First, rinse and place hens in a storage bag with 3-4 tablespoons of salt, fill the bag with water and let it sit over night in the fridge. Pat dry the hens, stuff with my version of meat stuffing. 1/2 stick of unsalted butter 1/2 cup white rum 1/2 cup guava paste. Pre heat your oven at 350 and bake for 1 hour to 1 hour 15 minutes, glazing the hens every 20 -30 minutes. Buen Provecho!

This is sprayed with rum every 20 minutes and alternatively with cocoa cola, cooked on a Hanging Pit with the wood from a prickly apple tree.
