Vegan Potato Salad

FOR THE POTATOES
2½ pounds of potatoes Yukon gold
½ gallon of cold water
1 teaspoon of salt
2 tablespoons of apple cider vinegar
FOR THE POTATO SALAD DRESSING
¾ cup of vegan mayo
1 tablespoon of apple cider vinegar
1 stalk (2 oz) of celery + ½ teaspoon celery seeds optional
½ cup of shallot
2 tablespoons of mustard
1 cup of fresh herbs dill, parsley, chives, or a mix of all
4 pickled cucumbers
1 teaspoon of salt
¼ teaspoon of black pepper
½ teaspoon of paprika

Creamy Potato Salad with Bacon
This Creamy Potato Salad is made with Baby Potatoes and loaded with Bacon, Chives and Hard Boiled Egg. Potato Salads don't come more irresistible than this! Chris x

Creamy Potato Salad with Bacon | Serves 6-8
????INGREDIENTS????
2lb / 1kg Baby Potatoes
1/2lb / 250g Bacon, cooked, cooled & chopped
3 Hard Boiled Eggs, cooled & chopped
1 cup / 240g Full Fat Mayo
1/4 cup / 60g Sour Cream
1 heaped tbsp Fresh Chives, finely diced (plus extra to garnish)
1 heaped tbsp Fresh Parsley, finely diced
1 tbsp Dijon Mustard
1/2 tsp Sugar, or to taste
1/2 small Red Onion, finely diced
1 tsp + 1/2 tsp Salt, or to taste
1/4 tsp White Pepper, or to taste
????METHOD????
Slice your potatoes into about 1/4” rounds and place in a large pot of cold water with 1 tsp salt. Bring to boil and cook for around 7-10mins, or until fork tender. Don’t over cook them or they’ll turn to mush. Drain (don’t rinse) and leave to completely cool (important!).
Meanwhile, in a small bowl combine your mayo, sour cream, dijon mustard, sugar, lemon juice, chives, parsley, 1/4 tsp white pepper (to taste) and 1/2 tsp salt (or to taste).
In a larger bowl combine your potatoes with your egg, bacon, red onion and sauce. Gently fold until completely coated.
I recommend popping it in the fridge in advance for the flavour to marry. Serve with an extra sprinkle of chives and enjoy!

* Eggs - 5
* Onion - 1,5 oz | 50g
* Celery - 1 stalk
* Pickled cucumbers - 1,5 oz | 50g
* Scallions - 0,5 oz | 10g
* Mayonnaise - 5 tbsp
* Dijon mustard - 2 tsp
* Apple cider vinegar - 1 tbsp
* Dried paprika - ½ tsp
* Salt - to taste
* Ground black pepper - to taste

* Cutting board
* Saucepan
* Salad bowl
???? Preparation:
1. Add eggs in a saucepan, pour in cold water, and bring to a boil, turn off the heat, cover the saucepan, and let them leave for 15 minutes. Then, cool the eggs in ice water and peel them.
2. Cut the potatoes into 1 cm cubes, rinse in cold water, place in a saucepan, cover with water, bring to a boil over medium heat, reduce the heat to low, and cook for 7-10 minutes. Towards the end of cooking, season with salt to taste and check for doneness with a fork. Drain on a colander after cooking.
3. In a salad bowl, combine the boiled potatoes, diced hard boiled eggs, finely chopped onions, celery, pickled cucumbers, and scallions.
4. In a separate bowl, mix mayonnaise, dijon mustard, apple cider vinegar, paprika, black pepper, salt. Add potato salad dressing to the salad bowl with the vegetables and mix well.
5. Serve as a salad or side dish with meat or fish, garnished with finely chopped scallions, dill or parsley.
❗️ Advices:
1. You can boil the potatoes with skins on if you like the added texture.
2. You can substitute or mix mayonnaise with natural or greek yogurt.
3. Use salt and spices to taste.
4. For a vegan version of the salad, replace eggs with avocado and use vegan mayonnaise.
5. For a smoky flavor, you can add finely chopped bits of fried bacon.
6. Apple cider vinegar can be substituted with white, wine or rice vinegar.
7. You can use Yukon Gold, Klondike Goldust or Russet potatoes. Or other gold varieties of potatoes.
