My family begs me to make this SWEET POTATO CASSEROLE every year, it will impress anyone who tries it. It is smooth and creamy with a crunchy crumble topping, I like to decorate the top with pecan halves in a beautiful design just to get away from tradition a little. The combination of vanilla, butter, cinnamon and eggs and milk make this casserole rich tasting and golden, then as if that wasn't enough, here comes the amazing crumble topping made with brown sugar, butter and flour with a beautiful design made out of pecan halves. This Sweet Potato Casserole can be enjoyed as a side dish or a dessert, either way is delicious and always a winner and made easy to be able to remove pecans if someone doesn't like them. This will always be highly requested in your home.
INGREDIENTS----------------
4 medium/large sweet potatoes (peeled and cubed)
2 eggs
3/4 C. granulated sugar
1 & 1/2 tsp. vanilla extract
1/2 tsp. cinnamon
1 tsp salt (for boiling)
1/4 to 1/3 C. milk
1/2 C. butter (1 stick)
Butter to coat casserole dish
CRUMBLE TOPPING_______________
1/2 C. brown sugar
1/3 C. All purpose flour
3 Tbsp cold butter (small cubes)
Pecan halves to decorate (as needed)
BAKE 350°
40 minutes or till golden brown

• 3 pounds sweet potatoes, scrubbed clean (5 to 6 small-to-medium)
• 1 1/2 teaspoons fine sea salt, plus more to taste
• 1 bay leaf, optional or a substitute fresh thyme or rosemary sprig
• 3 tablespoons butter
• 3 tablespoons sour cream, heavy cream, milk or half-and-half, optional
• 1/8 teaspoon ground cinnamon or more to taste
• Fine herbs and fresh ground black pepper, to taste

Sweet Potato Casserole
2 1/2 lb, can (about 3 cups) sweet potatoes, drained
1/3 cup sugar
2 eggs
1 Tablespoon vanilla
1/2 cup butter, softened
TOPPING:
1 cup brown sugar
1/3 cup flour
1/3 cup butter, room temperature
1 cup pecan pieces
Preheat oven to 350°.
Beat together sweet potatoes, sugar, eggs, vanilla, and butter. Pour into a non- stick sprayed 8 inch square baking dish.
In a medium sized bowl, work together the brown sugar, flour, butter and pecan pieces for the topping. Spread over the sweet potato mixture.
Bake 40-45 minutes or until top is lightly browned.
Center may not be set but will firm up as it cools. Allow to rest appropriately 15 minutes for casserole to set before serving.
