How To make Glazed Sweet Potato and Apple Casserole
4 Med Sweet Potatoes
2 Lg Apples, Preferably Macintosh
1/2 Tsp Salt
2 Tsp Lemon Juice
3 Tbsp Butter
1/3 C Molasses
1/4 C Brown Sugar
1/4 C Pecans -- chopped
Preheat oven to 350 F. Boil sweet potatoes until tender but still firm and allow them to cool. Then peel, slice, and place in a shallow baking dish. Core and slice the apples, then sprinkle salt and lemon juice over them. In a skillet bring butter to a slow sizzle and toss apple slices around in the pan until slightly soft. Arrange apples with the sweet potatoes. Then add molasses to butter remaining in pan and bring to a boil. Pour over apples and sweet potatoes, coating well. Sprinkle brown sugar and pecans on top. Bake for 30 mins or until brown and bubbly on top.

Sweet Potato Casserole
4-6 sweet potatoes, peeled and cubed
¼ cup brown sugar
¼ cup butter
¼ cup milk
1 tsp vanilla extract
½ tsp cinnamon
¼ tsp ginger
¼ tsp nutmeg
1 cup pecans chopped
½ cup brown sugar
½ cup flour
¼ cup butter, softened
Boil sweet potatoes until they are very soft; about 25 minutes. Drain sweet potatoes and transfer them to a mixing bowl. Add brown sugar, butter, milk, vanilla, cinnamon, ginger and nutmeg. Mash until thoroughly combined and smooth. Pour mixture into a baking dish. In a small bowl mix pecans, brown sugar, flour and butter. Crumble over the top of the mashed sweet potatoes. Cover with aluminum foil and bake at 375°F for 30 minutes.
