CHICKEN with SPINACH in CREAMY PARMESAN CHEESE
Ingredients
800g chicken breast, sliced thinly
250g mushrooms, sliced
salt and pepper for seasoning
olive oil
SAUCE
1/4 cup butter
2-3 garlic gloves
1 tbsp flour
1/2 cup chicken broth
1 cup heavy cream
1/2 cup grated parmesan cheese
1/4 tsp pepper
2-3 cups spinach, chopped
1/4 cup water
Easy & Simple Weeknight Chicken Recipe | Chicken Cooked In Spinach & Bacon Cream Sauce
Hi Friends! You all are going to love this easy weeknight chicken recipe! It's simple and quick to make and most importantly, it all cooks in one pan. Another thing I love about this particular recipe, is its versatility. You can easily substitute the chicken for shrimp, salmon, or pork and they would all be super flavorful. What you'll need to make the recipe:
1/2 tsp onion powder
1 tsp italian seasoning
1 1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp minced garlic (heaping)
salt (to taste)
1 cup heavy cream
4 strips of bacon
2 handfuls of spinach
4 chicken breasts
1. Prep your chicken by splitting any large chicken breast and placing them in a bowl.
2. Add all your spices to the bowl of chicken breast and coat the chicken with the spices.
3. Fry your bacon stovetop over medium heat until crispy and then remove from the pan. Drain them on a paper towel.
4. Discard bacon grease, leaving 2 tbsp in the skillet.
5. Saute your chicken breast for 5-6 minutes until they are golden brown on one side and then flip. Remain cooking for another 3 to 4 minutes and remove from the pan.
6. Now add the cup of milk and minced garlic, allowing the cream to begin to thicken.
7. Now add the spinach and let it cook until the spinach begins to wilt.
8. Add your chicken back to the pan and toss it in the cream sauce.
Serve over noodles or substitute the protein.

Chicken Meatballs in a Creamy Spinach & Feta Sauce

Ingredients
For the Meatballs:
1 pound ground chicken thigh meat
1/2 cup unseasoned bread crumbs
1/4 cup shredded parmesan cheese
1/2 large onion, finely chopped
a handful of fresh parsley, finely chopped
1 egg, beaten
3 garlic cloves, grated
1 and 1/2 teaspoons salt
1 teaspoon dried thyme
1/2 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
For the Sauce:
3-4 tablespoons olive oil
1 small onion, finely chopped
3 garlic cloves, grated
8-12 oz spinach leaves
1/2 cup heavy cream
1/2 cup chicken broth
4 oz feta cheese
pinch of crushed red pepper flakes
lemon wedges for garnish
Instructions
Make the Meatballs:
Pulse the onion in a food processor until finely chopped. Add it to a large mixing bowl.
Pulse the parsley until finely chopped and add to the mixing bowl along with all of the other meatball ingredients. Mix together until combined.
Form the meatballs and place them on a tray. (make extra and freeze them up to 3 months)
Cook the Meatballs:
Add some oil to a large skillet over medium heat. Add the meatballs to the skillet and cook for 8-10 minutes or until golden all around. Flip them approx. every 2 minutes. Transfer the meatballs to a plate and if the skillet has too much oil, remove it until there are about 3-4 tablespoons left in the pan.
Reduce the heat to low and add the finely chopped onion. Cook until soft and golden. Add the garlic and warm through for a few seconds until fragrant.
Add the spinach and season with a pinch of salt and pepper. Cook until wilted.
Add the cream and broth and cook for 5 minutes. Add the meatballs, crumble the feta cheese on top and warm through for 4-5 minutes.
Remove from the heat and set aside. The sauce will thicken as it sits. Squeeze some fresh lemon juice on top.
Serve with pasta, bread or cauliflower rice. Kali Orexi!

Sauté the chicken in a hot pan. Once browned remove and set aside. In the same pan, sauté the sliced mushrooms, once cooked down add spinach (you can add fresh or I steamed them first).
In a separate pan place 2 Tbsp flour, 2 Tbsp Fat Free Half & Half & 1 Tbsp of I Can’t Believe It’s Not Butter Spray - wisk those together - it would form into a paste. In that same pan add 1/2 Cup of Skim Milk & 3 Tbsp of Pecorino Romano Cheese. Combine together and it will form a Creamy Sauce. Once the sauce is ready — combine the chicken, spinach & mushrooms. I served this over Spaghetti Squash.

Fried Chicken on Creamy Spinach with Mushroom (15-20mins quick meal)
Hi guys welcome to my first ever food vlog. :)
Recipe & Procedure :)
1lb. chicken thigh
1/2 cup mushroom
3 cups spinach
1/2 cup cooking cream
1/4 cup yogurt
cayenne
garlic
salt&pepper
olive oil
*Saute mushroom in olive oil follow by garlic and cayenne powder, put in spinach and saute for 30 secs. Put cream, yogurt salt & pepper, give a good stir and simmer for 1 minute. Last part put chicken stir, cover and simmer for 3-5 mins and you're good to go! :)
