FULL LIST OF INGREDIENTS:
Serves: 4 Prep Time: 10 Mins Cook Time: 20 Mins
- 1 Lb Smoked Sausage, Cut into rounds.
- 2 to 3 Cans of RED Beans, 15-15.5oz (1 Drained, 1 Not Drained)
- 2.5 Cups Chicken Broth
- 1/2 Bell Pepper, Chopped ( I used 1/4 Red + 1/4 Green)
- 1/2 Cup Onion, Chopped
- 1/4 Cup Chopped Celery
- 1 Tsp Minced Garlic
- 1 to 2 Bay Leaves
- 1/4 Tsp Dried Thyme or 2 Sprigs of Fresh Thyme
- Pinch of Dried Oregano (Less than 1/4)
- 1 Tsp Better Than Bouillion Chicken Base OR Cajun Seasoning
- 1 Tsp Black Pepper
- 1/2 Tsp Cayenne Pepper
- 1 Tbsp Hot Sauce (optional)
- Scallions for Garnish

A New Orleans style Cajun Red Beans and Rice is a classic homey meal that everyone enjoys. Its enough to feed your family and so delicious. Hope you enjoy !

Ingredients
I bag Red kidney beans
9 cups water (not included in soaking)
2 cloves garlic
5 thymes
3 scallions
5 pimento seeds
1 tsp Celery seeds
2 tbsp beef bouillon
4 tsp Tony Chachere Creole
1 tsp onion powder
1 tsp garlic powder
1/2 can coconut milk (don’t skip)
1/2 cup water (mixed w/coconut milk)
1 bay leaves
3 tbsp butter
1 drop scotch bonnet pepper sauce
1 green bell pepper
1 yellow onion
1 pound smoked turkey sausage
4 garlic chopped garlic clove
Directions
1. Soak beans overnight about 14 hours . Add just enough water to cover beans. Rinse beans before cooking .
2. Fry sausage, add onions, bell pepper, minced garlic.
3. Drain water and rinse beans and add back to the pot (with cooked sausage)
4. Add 9 cups of water, thyme, scallion, pimento seeds, 2 garlic cloves and beef bouillon cook for 1 hr uncovered on med heat, stirring occasionally.
5. After 1 hour. Add Tony’s Creole, garlic powder, onion powder, celery seeds, cayenne pepper and coconut milk, bay leaves and cook for 30 mins until thickens .
6. Add butter and scotch bonnet pepper sauce and you’re all done !
WARNING!!
If you do not like heat skip the cayenne pepper and scotch bonnet sauce. For med heat add either cayenne pepper if not hot enough add scotch bonnet pepper sauce as well.
Tip: Add more water if needed it should be around 9-10 cups of water. Cooking time varies if not soaked over night 2 hrs minimum. Add beans to pot put enough water to cover beans when water starts to boil turn off stove cover beans and let beans soak for 2hours . (If not soaked overnight)

1 red and green bell pepper
2 stalks of celery
1 onion
1 lb andouille sausage
1 large smoked turkey leg or hamhock
1 tbsp cooking oil
dry oregano
1 tsp fresh diced thyme
smoked paprika
1 tsp better than bouillon chicken base
salt, pepper, garlic, onion powder, cayenne, cajun seasoning
3-4 cups chicken broth
green onion (garnish)
Directions:
Soak beans overnight in cold water (fridge).
In a medium sized pot add 2 cups water, cook rice according to package instructions; set aside.
Heat vegetable oil in a large Dutch oven over medium heat. Add sausage, and cook, stirring frequently, until sausage is lightly browned, about 3-4 minutes. Add onion, bell pepper and celery. Cook, stirring occasionally, until tender, about 3-4 minutes.
Stir in tomato garlic and oregano, thyme, chicken base, smoked paprika, cajun seasoning.
Stir in red beans, chicken stock, andbay leaf. Season to taste. Add whole smoked turkey leg. Bring to a boil; cover, reduce heat and simmer for about 1 hour, stirring every 15 minutes. Uncover; continue to simmer until reduced, an additional 15-20 minutes.
Using a wooden spoon or potato masher, mash beans until slightly thickened, if desired; season with salt and pepper, to taste.
Serve immediately, topped with rice and garnished with green onion, if desired.
CREOLE STYLE RED BEANS AND RICE | Spicy Slow Cooker Recipe
Easy and delicious spicy slow cooker creole red beans and rice recipe. Creole seasoned pinto beans made with trinity, andouille sausage and hamhocks slow cooked in a delicious broth in the slow cooker. Simple add all the ingredient to the slow cooker and walk away. Served with buttery white rice.
Shopping List:
1 lb. dry pinto beans
1-2 large hamhocks
1/2 lb. Andouille sausage
1/2 cup sweet onion, diced
1/2 cup green bell pepper, diced
1/2 cup celery, diced
1 tbsp. or more creole seasoning
1 tsp. dried thyme
1 tsp. or more red pepper flakes
1 tbsp. black pepper
Salt to taste
2-3 bay leaves
1-2 cup cooked white rice
Jalapeno peppers (optional)
Hot sauce (optional)
Directions:
Sort out any bad beans and rocks then add the beans to a large pot. Cover with water and soak overnight to 24 hours. Discard the soaking water, rinse and add the beans to the slow cooker.
Cover the hamhocks with water, bring to a boil, reduce the heat and simmer about 2 hours. DO NOT DISCARD THE BROTH.
In a skillet over medium high heat, sear the Andouille sausage then set aside.
In the same skillet, reduce the heat to medium and add the trinity (onion/peppers/celery). Season with salt and pepper and cook 5-7 minutes until soft. Add the slow cooker with the beans.
Add the creole seasoning, thyme, red pepper flakes, trinity, sausage, and hamhocks. Cover with the hamhock broth. Add the bay leaves, cover and cook on low 6-8 hours.
Salt the beans to taste.
Serve with white rice, adding jalapenos and hot sauce, if desired.
