The Ultimate Chocolate Chip Cookie
Chocolate chip cookies so good that you will not want to have them any other way. Brown butter, crisp edges with a soft and chewy center. No mixer is required.
Ingredients - Makes 14 Large Cookies (#16 scoop)
- 165g (12 tbsp) unsalted butter
- 25g (5 tsp) water
- 105g (1/2 cup + 2 tsp) white granulated sugar
- *210g (1 cup + 4.5 tsp) dark brown sugar
- **6g (1 1/4 tsp) kosher salt
- 15g (1 tbsp) vanilla extract
- 1 large egg + 1 egg yolk (fridge cold)
- 280g (2 1/3 cup) all-purpose flour
- 6g (1 tsp) baking soda
- 240g (8.5 oz) chocolate chips or 230g (8 oz) chopped chocolate bars (50-70% cacao)
- Flakey sea salt or kosher salt for toping cookies before baking
*If you only happen to have light brown sugar on hand, then replace both the white sugar and dark brown sugar with 315g of light brown sugar. The difference between white granulated, light brown, and dark brown sugar is molasses content. Light brown sugar contains 3.5% molasses and dark brown sugar contains 6.5% molasses.
**Use 8g (1 1/2 tsp kosher) of salt if you decide to not top your cookies with salt before baking.
Equipment
- mixing bowls
- small pot
- silicone spatula
- #16 (2oz) cookie scoop (the one I used in the video is made by Vollrath)
- parchment paper
- cooling rack

CHOCOLATE CHIP COOKIE
✔️Ingredients
1/2 cup unsalted butter(softened) [115 grams]
1/2 cup brown sugar [100 grams]
1/2 cup white sugar [100 grams]
1 whole egg (large) [60 grams]

1 tbsp cornstarch [8 grams]
1/2 tsp baking soda [0.7 gram]

????
1. Cornstarch helps the cookie to have its soft & chewy interior. You may skip this if preferred.
2. Skip the salt if using salted butter.
3. Butter is softened.
4. Chilling the dough helps the cookie to hold its shape when baked.
5. The recipe yields 18 pieces. (approx. 40-45 grams each when baked)
Bake in a preheated oven @ 170 C or 350 F for 14-16 mins.
⁉️Baking temp. & time may vary on the type of oven. Alter accordingly.
I used conventional oven with bottom heat only.
