How To make Crockpot Corn & Lentil Soup
Ingredients

chicken thighs, boneless, skinless
1 1/2
cup
lentils

each
onion, chopped

each
celery stalks, sliced
2
tablespoon
tomato paste
1
teaspoon
turmeric
3/4
teaspoon
cinnamon
7
cup
chicken broth
1
cup
corn kernels, cooked
2
tablespoon
lemon juice
1
salt
1
pepper
Directions:
Place 1 1/2 pounds boneless and skinless chicken thighs in a crockpot with 1 1/2 cups lentils, 1 large chopped onion, 3 sliced celery ribs, 2 tablespoons tomato paste, 1 teaspoon turmeric, 3/4 teaspoon cinnamon and 7 cups chicken broth. Stir well and cook 3 to 5 hrs on high or 7 to 9 hours on low or until thighs are tender. Remove thighs and cut into bite size pieces. Return meat to pot along with 1 cup cooked corn kernels, 2 tablespoons lemon juice, salt and pepper to taste. Stir well and serve hot.

Each of my children can customize their soup to their liking with additional topping such as extra cheese, sour cream and avocado. This recipe makes enough to serve my family of five with a serving or two perfect for leftovers or school lunches.

How to Make Healthy Lentil Soup | Cheap Soup Recipe
Cheap hearty lentil soup recipe with optional ham/bacon garnish! It’s a great way to use up the rest of your Christmas ham! The cost of this meal works out to about $0.73/generous serving if you get all your ingredients at Aldi (or another cheap store) except the lentils which are not available at Aldi ($1/16 oz at Walmart). You should get around 4 quarts/1 Gal of soup out of this recipe, so it’s perfect recipe to divide into dinner size portions and freeze them for a wonderful, hearty meal on a busy night. Or you can half this recipe, and it will serve 6! I also put some in ice cube trays and froze it for baby food!
To make vegetarian, simply omit the ham and use vegetable broth!
Lentil Soup ingredients
4-6 slices of ham or bacon
4-5 carrots peeled and chopped
2 onions chopped
6 cloves of garlic minced
2 bay leaves
1 tsp dried thyme or 2 tsp fresh
28oz diced canned tomatoes
16 oz dried lentils picked over/rinsed
1.5 tsp table salt
1 cup red or white wine (can substitute with chicken broth)
8 cups chicken/bone broth
3 cups water
2 TBS balsamic vinegar
Directions:
1)Brown ham/bacon in very large pot over med/high 3-4 minutes. Remove from pot and set aside. If using bacon, leave about 1 TBS of rendered fat in pot and discard the rest. Otherwise, add 1 TBS of olive oil to pot
2)add carrots & onions to pot and cook until starting to soften about 2 minutes and then add garlic and stir until fragrant about 30 seconds.
3)stir in tomatoes, bay leaves, thyme, salt and lentils.
4)add pepper to taste
5)turn down to low/med-low heat, cover and cook until vegetables are softened about 8-10 minutes.
6)increase heat to high and add wine; bring to a simmer and scrape bottom of pot.
7)add broth and water and bring to a boil.
8)reduce heat to low/med-low to maintain a gentle simmer, cover leaving small gap, and cook until lentils are tender (30-35 minutes for brown lentils and 40-45 minutes for green lentils)
9)remove bay leaves and add vinegar.
10)use immersion blender to create desired consistency. Enjoy garnished with ham/bacon!

Betty demonstrates how to make Slow Cooker Lentils Seasoned with Ham. This is a protein-filled dish that is very tasty and easy to make.
Slow Cooker Lentils Seasoned with Ham
1 pound dry lentils, washed and sorted
½ teaspoon salt
8 ounces finely-chopped cured ham
6 cups water, or as needed
Place washed and sorted dry lentils into slow cooker. Sprinkle with ½ teaspoon salt. Add 8 ounces finely chopped cured ham and 6 cups water. Turn slow cooker to HIGH setting and cook for 4 to 5 hours, until they are at desired tenderness. Spoon into a serving bowl and serve immediately. I hope you enjoy the lentils!
