How To make Crocodile Cafe's Chicken Tortilla Soup
Ingredients
2
quarts
chicken stock
1
large
red onion, diced
3
corn tortillas, fried and broken
3
roma tomatoes, diced
1/2
bunch
cilantro
8
ounces
ancho chile paste, *
2
each
chicken breast, halves, **
1
salt, to taste
6
ounces
queso fresco cheese, crumbled
2
corn tortillas, fried crisp
Directions:
* or 6 or 7 ancho chiles pureed
** large, cooked and shredded
Bring 1 quart chicken broth to boil with onion in soup pot.
Combine remaining chicken broth with 3 fried tortillas in a blender and blend
until combined and slightly thickened. Pour into heated broth along with tomatoes, cilantro, chile paste, and chicken.
Season to taste with salt.
Bring again to boil. Serve garnished with cheese and tortilla strips.
NOTE: To puree ancho chiles, soak 6 or 7 chiles in hot water until tender, or simmer just until tender. Remove stem and seeds and puree in blender with small amount of water until paste in formed. Strain through sieve to remove skin, if desired.
Each serving with cheese and chips contains about:
146 calories, 866 mg sodium, 31 mg cholesterol, 4 g fat, 9 g
carbohydrates, 17 g protein, 0.55 g fiber.

New Orleans food or NOLA Food as some refer to it, is amazing. You’ll find a great selection of cajun and Creole influenced food in New Orleans. This video features the amazing food in New Orleans.
The New Orleans Food we tried included the following:
-Muffuletta: Central Grocery on Decatur Street in the French Quarter in New Orleans invented the Muffuletta. A Muffuletta is essentially a sandwich meats sliced in house, locally baked handmade bread and our family’s Italian Olive Salad
-Beignets and Chicory coffee at Cafe Du Monde: Cafe Du Monde is open 24 hours a day. They server only two things, beignets and the New Orleans coffee which contains chicory. The beignets are served coated in icing sugar.
-Kings Cake: This traditional cake is popular during Mardi Gras and is sold mainly in supermarkets and shops. There are a few bakeries where you can get smaller pieces to sample. This brioche type cake is filled with something, I had chocolate, covered in white icing and coloured sugar. Simple but delicious.
-Red Fish Grill: Gumbo at the Red Fish Grill on Bourbon Street in New Orleans is served with Alligator sausage and shrimp.
-Palace Cafe: The Palace Cafe on Canal Street in New Orleans specialises in contemporary Creole food. Two of the highlights include the Turtle Soup and the Bread Pudding with white chocolate sauce. This place is not cheap, but the price to quality ratio is on point.
-Po-Boys at Pierre Maspero’s: Pierre Maspero’s, situated in an iconic building in the French Quarter, servers some of the best Po Boys in town. Po Boys are basically massive sandwiches served on soft French baguette type bread. The Po Boy fillings range from fried shrimp, fried fish, or fried alligator to Roast Beef or Pulled Pork
-Arnaud’s Remoulade: Grilled oysters are very popular in New Orleans. This place has a tasting platter where you can sample six different fillings. Arnaud’s Remoulade also has a very tasty Jambalaya with chicken and sausage.
