How To make Deli Style Pasta Salad
7 ounces tricolor spiral pasta
6 ounces hard salami
thinly sliced
6 ounces provolone cheese :
cubed
2 1/4 ounces ripe olives sliced and drained
1 small red onion :
thinly sliced
1 small zucchini, halved & thinly sliced
1/2 cup green bell pepper chopped
1/2 cup sweet red bell pepper :
chopped
1/4 cup fresh parsley minced
1/4 cup Parmesan cheese :
grated
1/2 cup olive or vegetable oil
1/4 cup cider or red wine vinegar
1 clove garlic minced
1 1/2 teaspoons ground mustard
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 teaspoon salt
dash pepper 2 medium tomatoes :
cut into wedges
Cook the pasta according to package directions; rinse in cold water and drain. Place in a large bowl; add the next nine ingredients. In a jar with tight-fitting lid, combine oil, vinegar, garlic, mustard, basil, oregano, salt and pepper; shake well. Pour over salad; toss to coat. Cover and chill for 8 hours or overnight. Toss before serving. Garnish with tomatoes.

Whether for a potluck or an outdoor picnic or barbecue this Deli style American macaroni salad is sure to please the crowd. This macaroni salad is simply a pasta salad made with cooked elbow macaroni in a dressing of mayonnaise, vinegar, masturd and finely chopped crunchy vegetables. Just like a coleslaw of a potato salad, it makes a great side dish to other meat dishes.
SOME NOTES:
1)Macaroni boiled til tender absorbs the vinegar and dressing really
well.
2) We do not wash as the coating of starch formed while cooling
absorbs the dressing well.
3)Vinegar also helps the macaroni to absorb the dressing.
4)You can even use sweetened condensed milk(as the original recipe
calls for) which I have replaced by cheese.
INGREDIENTS:
1)elbow macaroni 200 gm (dry weight)
2)water 4-5 cups for boiling macaroni
3)chicken 200 gm (boneless and skinless)
4)water 2 cups for boiling the chicken
5)garlic 1 large clove (roughly chopped)
6)salt 1/4 tsp (for boiling the chicken)
8)black pepper powder 1/4 tsp (for boiling the chicken)
9)mayonnaise 1/2 cup plus 1 tsp extra for finishing touches
10)white vinegar 1 tbsp
11)salt 1 1/4 tsp (for the dressing)
12)black pepper powder 1/4 tsp (for the dressing)
13)sugar 1 tbsp
14)celery 1 1/2 stalk (finely chopped)
15)onion 1/2 medium (finely chopped)
16)bell pepper 3/4 cup (finely chopped)
17)carrots 1/2 cup (roughly grated)
18)cheese 100 gm (grated)

An easy to prepare, deli style macaroni salad with fresh ingredients and lots of flavor. The perfect summertime side dish.
1 lb elbow macaroni
2 cups mayo
1/2 cup sour cream
1 TBS white vinegar
2 TBS Dijon mustard
1 tsp creole mustard
2 tsp granulated sugar
1 tsp garlic powder
2 tsp onion powder
1 celery stalk (diced)
1/4 of a red onion (finely diced)
1/4 of a red bell pepper (diced)
1/4 of a green bell pepper (diced)
1/4 cup fresh parsley (chopped)
Chiffonade basil (2-3 fresh basil leaves)
4 ounces Monterey Jack cheese cubed (optional)
Salt to taste
