How To make Diabetic Linguine with Clam Sauce
1/4 cup Finely chopped onion
Shallots finely chopped Bay leaf (or 2) Parsley stem Sprig fresh thyme OR 1/4 teaspoon Dried thyme
(or 5) peppercorns 1 cup White wine
3 quarts Steamer clams (24-30)
1 tablespoon Olive oil
2 (or 3) garlic cloves minced
1/4 teaspoon Dry mustard
1/2 cup Chopped parsley
Dash red pepper flakes 1 pound Linguine -- cooked & drained
Combine onion, shallots, bay leaf, parsley stems, thyme, peppercorns and wine. Bring to a boil. Add scrubbed clams and steam for 4 to 5 minutes or until clams open. Remove clams, discarding any that haven't opened, separate them from shells and chop coarsely. Strain and save liquid. Heat olive oil and 1 TABLESPOON reserved clam juice in a medium-size non-stick frying pan. Add garlic and mustard and cook for 1 minute. Add parsley and cook 1 to 3 minutes more. Add 1 cup reserved clam juice and simmer for 5 minutes or until sauce is reduced by half. Add chopped clams and cook for 1 to 2 minutes. Toss clam sauce with linguine, garnish with lemon, if desired, and serve warm. Makes 4 servings.

Hi everyone!
Today I will share with you the best way to cook zucchini noodles or zoodles.
After you make your zucchini into pasta or noodles, preheat olive oil under high heat. When the olive oil is nice and hot, place the zucchini noodles in the pan and add garlic salt and black pepper to taste. Cook the zoodles for abut 2 minutes total while constantly turning them over so they don't burn.
When the liquid evaporates, strain the noodles for a minute or so and serve them with your favorite sauce.
I like them with marinara sauce, but my favorite is my homemade Alfredo sauce.

White Clam Sauce with Zoodles
White Clam Sauce with Zoodles or Spaghetti Squash
1/2 cup butter
1/4 lb fresh mushrooms optional
1/4 lb green onions
2 cans minced clams and juice
8 oz container of full fat sour cream
1/2 tea pink him. Salt
1/8 tea black pepper
1/2 tea garlic powder
3 tbls heavy cream
Optional cherry tomato’s, sun dried tomatoes, roasted peppers red pepper flakes to taste
4 small zucchini’s spiral into zoodles or sliced thinly lengthwise
1 med spaghetti squash
Heat oven to 350 degrees.
On a cookie sheet with paper towels let zucchini sweat for 30 minutes. Pat with paper towels and roast with salt, pepper and garlic powder olive oil and roast in oven
If using spaghetti squash cut in half clean out seeds add olive oil to cookie sheet and squash add salt pepper and garlic powder and cook for 40-60 minute in the oven until your fork can make squash look like angel hair pasta.
In a saucepan over low to med heat melt butter and cook onions and mushrooms until tender. Add clams with juice cook for 3 minutes, add other ingredients and cook for 3 minutes over low heat.

1. Salty Snacks
Did you know that it’s estimated we need about 500 grams of sodium everyday? As little as that may sound, we tend to overeat the recommended amount and super salty snacks are to blame. But how do they affect blood pressure?
2. Canned Food
Honestly though, how can you expect food stored in tin cans to be healthy? Most of these cans have an inner lining of BPA, a harmful chemical responsible for raising blood pressure. Canned food makes cooking meals very easy but the health hazard that comes along with it is huge.
3. Pizza
Yes, it’s true. Pizza is your worst enemy when it comes to hypertension. This comfort food of the world, has all the ingredients that lead to a rise in blood pressure. It is loaded with tons of salt- so much so - that just one slice of pepperoni contains more than half of your daily recommended salt need. Now imagine downing a whole pizza. Also, you can’t fool high BP with a veggie pizza because it contains just as much salt. The high content of saturated fat is also another factor that raises blood pressure.
4. Sugary Food
If you thought salt was your worst enemy when it comes to blood pressure, think again. Sugar can do more damage than salt! Not just sugary desserts, beverages are equally harmful.
