CROCKPOT: *If using a crockpot, add all of the ingredients into a slow cooker, and cook on low for 4 hours, or on high for 6 hours.
INSTAPOT: If using an Instapot, saute veggies the same in the bottom of your pot. Then, add all of the ingredients into the pot and cover. Cook on high pressure for 20 minutes. Vent, stir, and enjoy!
FULL LIST OF INGREDIENTS:
Serves: 4| Prep Time: 10 Mins | Cook Time: 20 Mins
- 1 Rotisserie Chicken ( I only used half of a large one.)
- 32oz Chicken Broth
- 3 to 4 Tbsp Mexican Crema (OR PREFERABLY 1/4 Cup Heavy Cream or 4oz Cream Cheese)
- 1 15oz Can White Kidney Beans
- 1 15oz Can of Northern Beans
- 4oz Can Diced Green Chiles
- 1 Yellow Bell Pepper, Diced
- 1/2 White Onion, Diced
- 1.5 Cups Frozen Fire Roasted Corn (Equivalent to 1 Can)
- 1 Jalapeno Pepper, Diced
- 1 Tsp Minced Garlic
- 1 Tsp Seasoned Salt
-1 Tsp Onion Powder
- 1 Tsp Garlic Powder
- 1 Tsp Ground Cumin
- 1 to 2 Tsp Chili Powder
- Salt and Black Pepper to Taste
- Cilantro, Lime, Cheese, Tajin for Garnish

I originally tasted the Doves Nest White Chicken Chili in Waxahachie, Texas 15 years ago and decided it became the inspiration for mine. Through the years I took that recipe and changed it so that it became more personal and colorful. I hope you love it as much as my friends, family and I do! Now that it’s getting colder outside, it’s the perfect time for chili! Serve this with corn bread and a great white wine and you’ve got a hit on your hands!

Are you team Medium Rare or Well Done? ????
A raging debate more controversial than ones political beliefs, that I’m sure will continue in the comment section. Here is my perspective:
People should enjoy what they like and should not be judged for it. However, I do believe that objectively, certain cuts are optimized at different temperatures based on 3 variables: tenderness, juiciness, and flavor. Here are some examples:
Filet mignon: extremely lean and tender meaning it will quickly deteriorate and dry out if over cooked. For that reason a low temperature between 120-130F (rare) is often preferred. Cook a filet to 165F (well done) and the result will be extremely dry.
Brisket: filled with collagen and extremely tough, only becoming tender and juicy at high temps. Taking it up to a high internal temp between 200-210F (well done) is preferred. Cook a brisket to medium rare, and the result will be inedibly chewy.
As such, internal temps are highly dependent on the cut of beef itself!
Another critical piece of information is that some cultures commonly consume cuts that are optimized at lower temps while others primarily eat cuts that are high in collagen and require “well done”. I think this contributes to such strong and often conflicting opinions of the best way to cook beef.
With that said, I highly encourage you to continue experimenting and finding your own preference.
