How To make Emeril's Calzone

DOUGH:
1 ts Yeast
3/4 c Warm water
1/4 c Fresh basil; minced
1 1/2 ts Salt
1 Sun-dried tomato; chopped
1 tb Garlic; minced
1/4 c Olive oil
FILLLING:
2 tb Olive oil
1 sm Onion; diced
1/2 lb Lean ground pork
1 tb Fresh oregano; chopped or
1 ts Dried
1 sm Bell pepper; diced
1 ts Garlic; minced
1/2 c White wine
Salt and pepper DOUGH-Mix yeast, warm water. Stir. Add basil, salt, sun-dried tomatoes, garlic and olive oil. Stir well. Add flour and mix until a ball forms. Remove and put on a floured board. Let proof a few minutes. Flour rolling pin and roll out into a thin rectangle. Cut across in 3" widths. Take each piece and put a little filling. Roll up and bake 400~ 20 to 25 minutes. FILLING-Saute in oil, onions, pork, bell pepper and garlic until onions are translucent and pork is cooked. Add remaining ingredients. Source: How to Boil Water with Emeril Lagasse.

Sorry, the footage of me stuffing the dough got lost. Basically just put a whole bunch of the mixture on to the dough and fold over. Brush the egg wash over the calzone and fold the edges shut.

Scallions & Cheddar Biscuits Recipe
SERVES 4-6
INGREDIENTS:
1¼ cups all-purpose flour,
plus more for dusting
½ cup cake flour
¾ tsp. baking powder
¼ tsp. baking soda
1 tsp. granulated sugar
¾ tsp. salt
¼ cup unsalted butter, cold
& cut into cubes
½ cup grated cheddar
3 tbsp. chopped scallions
¾ cup plus 2 tbsp. buttermilk
3 tbsp. butter, melted
softened butter, for serving
DIRECTIONS:
1. Sift the all-purpose flour, cake flour, baking powder, baking soda, sugar,
and salt into a medium-size bowl. Use your fingers or a pastry cutter
to work the cubed butter into the flour until the pieces are pea sized.
2. Add the cheddar and scallions and toss to combine. Add the
buttermilk and use your hands or a rubber spatula to stir until the milk
and flour come together to form a dough. Be careful not to overmix.
3. Lightly dust a work surface with flour. Turn the dough out onto
the work surface. Use your hands to press the dough into a ½ in.-thick
disk about 8 in. in diameter. Use a lightly floured 2 1/2-in. round cutter
to cut out six dough rounds. Be sure to press straight down when
cutting the dough because a twisting motion will prevent the dough
from rising.
4. Lightly brush the Baking Pan with a bit of the melted butter.
Then, arrange the biscuits in a single layer on the Baking Pan
and brush the biscuits with 1 tbsp. melted butter.
5. Slide the Pizza Rack into Shelf Position 5. Place the Baking Pan on top
of the Pizza Rack. Select the Airfry setting (400° F/205° C). Set the
cooking time to 8 mins. Press the Start Button to begin the cooking
cycle. Cook until the biscuits are golden brown.
6. Serve with the softened butter.

NY-Style Thin Crust Pizza Recipe
Serves 2–4
Prep Time: 30 minutes
Cook Time: 22 minutes
Ingredients:
1 lb pizza dough, divided into two balls
cornmeal, for dusting
1 cup fresh tomato sauce
½ cup fresh basil leaves
1 cup freshly grated Parmigiano-Reggiano
1 lb mozzarella, sliced ¼-inch thick
2 tbsp. extra virgin olive oil
Directions:
1. Place the dough onto a surface dusted with cornmeal. Use a lightly floured rolling pin to roll the dough to fit on the Crisper Tray (about 1⁄8–¼ in. thick).
2. Spoon the sauce evenly over the dough, leaving a ½-in. border along the edges. Top the sauce with the basil leaves and then the Parmigiano-Reggiano and mozzarella. Brush the dough and cheese with 2 tbsp. olive oil.
3. Place the Pizza on the Emeril Air Fryer Crisper Tray. Slide the Crisper Tray into Shelf Position 5. Select the Pizza setting (375° F/190° C for 20 mins.). Press the Start Button to begin the cooking cycle.
4. When the cooking time is complete, slide the Crisper Tray into Shelf Position 1. Select the Pizza setting. Set the cooking temperature to 400° F/205° C and set the cooking time to 2 mins. Press the Start Button to begin the cooking cycle.
5. When the cooking time is complete, cut the pizza into four slices and serve immediately.
