Banana Bread Recipe
Today I'm sharing with you my favourite Banana Bread Recipe. It's a simple and easy recipe to follow that will give you a perfectly moist banana bread. Perfect recipe for weekend breakfast / brunch or for enjoying with a cup of coffee or tea.
Make sure to use over ripened bananas in this recipe, it is what gives the bread sweetness and flavour.

Recipe
2 Cups / 16 oz / 250g Plain Flour
1 Teaspoon / 0.16 oz / 5 ml Baking Soda
1/4 Teaspoon / 0.04 oz / 1 ml Salt
3/4 Cup / 6 oz / 150g Brown Sugar
3-4 Over Ripe Bananas
2 Eggs
1/3 Cup / 2.6 oz / 80 ml Vegetable or Canola Oil
Whisk the dry ingredients together in a bowl. Mash the over ripe bananas with a potato masher or fork. In a separate bowl combine the brown sugar, eggs, oil, and mashed bananas. Mix until well combined. Add the dry ingredients to the wet ingredients and fold together until just combined, do not over mix. Pour the banana bread batter into a loaf tin and bake for 60-65 minutes at 180C or 350F. Leave to cool for 10 minutes in tin before turning out on a wire rack.

It might not seem banana bread — a recipe made maybe BILLIONS of times — leaves a lot of room for innovation, but this version from Dessert Person is subtly different than your typical loaf. The almond butter swirl on top and almond butter in the batter adds a savory edge and toasty flavor, while coconut oil and yogurt keeps it tender and moist. Claire demos the very easy, quick recipe that requires little more forethought than forgetting some bananas on your counter until they turn brown.

Special Equipment:
4 1/2 x 8 1/2-inch loaf pan, measured from the top
Ingredients:
Coconut oil for the pan
3 tablespoons plus 1/3 cup almond butter (4.6 oz / 130g)
1 tablespoon plus 2/3 cup sugar (5 oz / 143g)
1 teaspoon plus 1/2 cup virgin coconut oil (4 oz / 115g), gently warmed to liquefy
1 1/3 cups all-purpose flour (6.1 oz / 173g)
1 teaspoon baking powder (0.14 oz / 4g)
1 teaspoon Diamond Crystal kosher salt (0.11 oz / 3g)
1/2 teaspoon baking soda
1/4 teaspoon ground cardamom
2 large eggs (3.5 oz / 100g), cold from the refrigerator
1 cup mashed banana (8 oz / 227g), from about 2 very ripe large bananas
1/3 cup plain whole milk Greek yogurt (2.8 oz / 80g)
1 teaspoon vanilla extract
1/2 cup unsalted roasted almonds (optional), coarsely chopped (2.1oz / 60g)

This is going to become your family's favorite Banana Bread recipe! We absolutely love it! Grab the recipe below or get all the variations here:
2 cups all purpose flour
3/4 tsp baking soda
1/2 tsp salt
3 very ripe bananas mashed well
3/4 cup sugar
6 TBSPS unsalted butter melted and cooled
2 large eggs at room temperature and lightly whisked
1/4 cup plain yogurt room temperature (or sour cream)
1 tsp vanilla extract
Instructions
Preheat your oven to 350 degrees. Spray a 9 by 5 inch loaf pan well with cooking spray.
In a large bowl, whisk together the flour, baking soda, and salt.
In a medium bowl, whisk together the bananas, cooled butter, eggs, sour cream, sugar, and vanilla.
Gently fold the wet ingredients into the dry ingredients. Be careful not to over mix.
Pour the bread batter into the prepared pan. Bake for 55 minutes or until a toothpick inserted slightly off center in the bread comes out with just a few crumbs.
Allow the bread to cool in the pan for 10 minutes. Then remove and allow to cool on a cooling rack for 35 minutes before slicing and enjoying.

BETH’S ULTIMATE BANANA BREAD
Makes 1 loaf
*PRINT RECIPE HERE*
INGREDIENTS:
4 overly ripe, mashed bananas
3 eggs
3/4 cup (180 ml) of canola oil
¼ cup (60 ml) of water
½ cup (100g) of sugar *I find this is enough sugar if adding the chocolate chips but if you have a sweet tooth I would increase it to 3/4 cup (150g)
1 tbsp (15 ml) vanilla
2 ½ cups (300 g) of flour
1/2 teaspoon (5 ml) salt
2 teaspoons (10 ml) baking soda
½ cup (75 g) of bittersweet chocolate, chopped
½ cup (75 g) of Pecans or Walnuts
METHOD:
Preheat oven to 350F (176C) degrees. Spray a 9” x 5 (23cm x 13cm) loaf pan with baking spray.
In a medium bowl mix dry ingredients and set aside. In a large bowl mix wet ingredients until combined.
Combine the dry into the wet, 1/3 at a time, being careful not to over mix! (Or you will have tough bread!) Fold in the chocolate chips and nuts.
Pour into a loaf pan. Bake for 55 mins or until a toothpick comes out clean.
If bread starts to brown too much on the top, cover with foil and continue to bake until cooked through. Slice into thick slices and serve
