How To make Fiery Shrimp Curry
2 Lemon grass stalks; -OR-
2 ts -Lemon zest
2 Shallots; minced
3 Garlic cloves; minced
2 ts Fresh ginger, grated
2 ts Coriander seeds
6 Yellow or green chilies
-(minced) 1/2 c Fresh kaffir lime leaves
-(minced), -OR- 1 ts -Lime zest
1 ts Honey
1/2 c Unsweetened coconut milk
1 lb Shrimp; peeled
2 ts Canola oil
1/2 c Lime juice
1/4 c Mirin or white wine
1/2 ts Salt
PREP TIME: 15 minutes COOKING TIME: 10 minutes 1. Remove tough outer leaves and ends of lemon grass and discard.
Coarsely chop lemon grass. 2. Combine lemon grass, shallots, garlic, ginger, coriander, chilies,
cilantro, kaffir leaves, honey and coconut milk in a food processor and puree until smooth. 3. Heat oil in a large skillet and saute shrimp until opaque, about 5
minutes. Add lime juice, mirin, salt and lemon grass mixture to shrimp. Continue cooking 3 to 4 minutes until shrimp are done. Per serving: 276 calories, 10.6 g fat, 34% calories from fat, 173 mg cholesterol, 0 g fiber.

Tips:
• Do not crowd the shrimp while frying or they won't brown properly. Fry in multiple batches if required
• Cook on high flame for about 1 minute on each side for large shrimp. Change this depending on the size you're using
• Add extra oil while frying to make shrimp infused oil. This infused oil can then be added to stir fries, fried rice or noodles for an extra punch of flavour
• Cook the sauces on low flame to avoid burning and develop a deeper flavour
Pairing:
• Noodles, fried rice and steamed rice are always a great option
• Use as a filling for lettuce wraps with shredded cabbage, cucumber and carrots with a sprinkling of sesame oil and toasted sesame seeds

This shrimp recipe is very easy and quick to make, but it is very delicious. I used small sized prawns but you can use medium or large sized ones as well.
Ingredients required for making shrimp masala - Serves 4 to 5
* 580 gm/1.3 lb shrimp or prawns
* 250 gm/ 9 oz / 1 very large onion
* 20 gm/ 1 oz ginger
* 20 gm/ 3 large garlic cloves
* 300 gm/ 11 oz/ 2 large red tomatoes
* 1 & 1/2 teaspoons Kashmiri red chilli powder. Please adjust proportion according to your preference. You can also use a combination of paprika and chilli powder or only paprika if you want to avoid the heat totally.
* 1/2 teaspoon turmeric powder
* 2 teaspoons ground coriander (dhania powder)
* 1 teaspoon ground cumin (jeera powder)
* half a teaspoon garam masala powder.Home made Garam Masala -
* 1 teaspoon heaped salt or as per taste
* 1 teaspoon sugar (optional)
* 1 teaspoon Mexican crema/sour cream/heavy cream/any cooking cream/4 tablespoons coconut milk (can add more)
* 1 green chilli (optional)
* chopped coriander for garnish
* 4 To 5 tablespoons oil
Serve it with hot steamed rice.
** Please note that shrimp gets rubbery if overcooked.

Easy Shrimp Curry without Coconut Milk
RECIPE: Hi Guys, today I’ll show you How to Make Shrimp Curry without Coconut Milk easily and quickly. The gravy is creamy and wonderful served over rice or with any type of bread. I’m using large shrimp which are 31 to 40 per pound, cleaned and deveined. I’ve left the tails on, you can take them off if you like. Any size shrimp will work with this recipe. Heat up a pan and add vegetable oil, you can use coconut oil for a richer flavor. Add chopped yellow onion, finely chopped garlic and ginger, a little salt. Saute until golden brown. Add ground turmeric, red chili powder, ground coriander and cook for about 20 seconds on low heat so the spices don’t burn. To make our gravy thick, we’ll blend chopped tomatoes and the onion mixture. Add a little water if you need to. Add the paste to the same pot, some water. Stir. Taste and add salt, the shrimp, cover and bring this to a boil. Once it comes up to a boil, turn the heat down and cook for 5 to 10 minutes until the shrimp is cooked. The time depends on the size of shrimp you’re using. During the last minute of cooking, add garam masala. When the shrimp are cooked, add chopped cilantro if you wish. 1 pound extra-large shrimp peeled and deveined
¼ teaspoon salt
¼ teaspoon black pepper freshly ground
¼ teaspoon cayenne pepper
2 tablespoon lemon juice
FOR THE SAUCE
1 tablespoon coconut oil
1 medium onion chopped
3 cloves garlic minced
1 tablespoon fresh ginger minced
½ teaspoon black pepper freshly ground
½ teaspoon salt or to taste
½ teaspoon turmeric
2 teaspoon ground coriander
1 teaspoon curry powder
14½ ounce diced tomatoes
13½ ounce coconut milk

Ingredients for Prawn Curry :
- Prawns, medium sized (cleaned and deveined) - 500 gms gross- 250-300 gms net
- Onions, fine chopped- 2 small
- Ginger garlic paste- 1 tsp
- Tomatoes, fine chopped- 2 small
- Green chillies, slit & cut- 2
- Salt- 3/4 tsp or to taste
- Turmeric powder- 1/4 tsp
- Red Chilli powder- 2 tsp or less as per taste
- Coriander powder- 1/4 tsp
- Cumin powder- 1/2 tsp
- Garam masala powder- 1/2 tsp (Link to our Garam Masala Recipe:
- Coconut milk- 1 cup (of a quarter coconut or readymade)
- Coriander leaves, chopped- 1 tbsp
- Oil- 2 tbsp
Preparation:
- Shell, devein and wash the prawns. Let the water drain from the prawns.
- Chop the onions and the tomatoes, slit and cut the green chillies.
- Take out coconut milk from a quarter of a coconut or use fresh coconut milk available in stores.
Process:
- Heat 2 tbsp oil in a kadai and add the chopped onions.
- Fry on medium to low heat till translucent( around 8-10 mins) and then add the green chillies.
- Add the ginger garlic paste. Mix and fry for around 2 mins till raw smell is gone.
- Add the chopped tomatoes, mix and add the salt. Cook for around 5 mins till tomatoes are soft.
- Add all the powders other than garam masala powder.
- Mix and add 1/2 cup of water. Bhuno on medium for around 2-3 mins till the masalas are cooked.
- Now add the prawns and mix well. Fry for around 5 mins on medium heat.
- Add the coconut milk, let it come to a boil, lower the heat to low and cover & cook for around 10 mins.
- Now add the garam masala powder, mix & sprinkle chopped coriander leaves.
- Serve hot with roti or rice.
