How To make Fiery Shrimp Curry
2 Lemon grass stalks; -OR-
2 ts -Lemon zest
2 Shallots; minced
3 Garlic cloves; minced
2 ts Fresh ginger, grated
2 ts Coriander seeds
6 Yellow or green chilies
-(minced) 1/2 c Fresh kaffir lime leaves
-(minced), -OR- 1 ts -Lime zest
1 ts Honey
1/2 c Unsweetened coconut milk
1 lb Shrimp; peeled
2 ts Canola oil
1/2 c Lime juice
1/4 c Mirin or white wine
1/2 ts Salt
PREP TIME: 15 minutes COOKING TIME: 10 minutes 1. Remove tough outer leaves and ends of lemon grass and discard.
Coarsely chop lemon grass. 2. Combine lemon grass, shallots, garlic, ginger, coriander, chilies,
cilantro, kaffir leaves, honey and coconut milk in a food processor and puree until smooth. 3. Heat oil in a large skillet and saute shrimp until opaque, about 5
minutes. Add lime juice, mirin, salt and lemon grass mixture to shrimp. Continue cooking 3 to 4 minutes until shrimp are done. Per serving: 276 calories, 10.6 g fat, 34% calories from fat, 173 mg cholesterol, 0 g fiber.

**Ingredients**
2 Pounds Shrimp
1 tbsp Curry Powder
1 tbsp Turmeric Powder
1 tsp salt
1 tbsp all purpose or any seafood seasoning
Red, Yellow and Green Bell Peppers (flavor & Color )
2-3 gloves garlic (chopped )
1 small onion (chopped)
2 pimento peppers (if available for flavor)
Few slices scotch bonnet peppers
1 twig of scallion & thyme
1 carrot (chopped) optional
1 cup coconut milk
3 tbsp cooking oil
1/2 cup water

Ingredients for Prawn Masala:
- Prawns/ Shrimp, gross 1 kg- Nett 500 gms (shelled and deveined)
Fo the Masala Paste:
- Cumin Seeds- 1 tsp
- Onion, thick slices- 200 gms (2 big onions)
- Ginger, chopped- 1” piece
- Garlic cloves- 7-8 (8 gms)
- Green Chillies- 3-4 cut into 2
- Tomato, thick sliced- 100 gms (2 small)
Spice Powders:
- Turmeric Powder- 1/2 tsp
- Red Chilli Powder- 2 tsp
- Kashmiri Chilli Powder- 1.5 tsp
- Coriander Powder- 3 tsp
- Cumin Powder- 1 tsp
- Garam Masala Powder- 1 tsp
Other Ingredients:
- Oil- 4.5 tbsp
- Salt- 1.5 tsp
- Coriander Leaves, fine chopped- 2 tbsp
Preparation:
- Shell the prawns, devein and clean them. Drain the water.
- To make the masala paste, make thick slices of the onion and tomatoes, peel the ginger & garlic and chop the ginger. Cut the green chillies.
- Now heat 1.5 tbsp oil in a pan and add the cumin seeds. Give a stir and then add the onion slices. Fry on medium heat for 3 mins till the onions become translucent.
- Now add the ginger, garlic and green chillies, give a mix and fry on medium heat for 2 mins.
- Lastly add the tomato slices, give a mix and continue to fry on medium heat for 3 mins till the tomatoes are soft.
- Set aside on a plate and allow to cool.
- Once cooled, add the mix to a grinder/blender and blend it to a paste after adding 2 tbsp water.
- Fine chop the coriander leaves and set aside.
Process:
- Heat oil in a wok or kadhai.
- Now add the masala paste (made above) and fry on medium heat for 3 mins.
- Add all the spice powders other than garam masala powder and 1/2 tsp salt, give a mix and fry on medium heat for another 5 mins adding a splash of water whenever required. Fry till oil separates.
- Now add the prawns, garam masala powder and 1 tsp salt, give a mix and fry/bhunno on medium heat for 3 mins.
- Add 200 ml water, give a mix and cover & cook on low heat for 7 mins till the prawns and the gravy are cooked and oil separates.
- Garnish with finely chopped coriander leaves, mix and serve.

Ingredients for Prawn Curry :
- Prawns, medium sized (cleaned and deveined) - 500 gms gross- 250-300 gms net
- Onions, fine chopped- 2 small
- Ginger garlic paste- 1 tsp
- Tomatoes, fine chopped- 2 small
- Green chillies, slit & cut- 2
- Salt- 3/4 tsp or to taste
- Turmeric powder- 1/4 tsp
- Red Chilli powder- 2 tsp or less as per taste
- Coriander powder- 1/4 tsp
- Cumin powder- 1/2 tsp
- Garam masala powder- 1/2 tsp (Link to our Garam Masala Recipe:
- Coconut milk- 1 cup (of a quarter coconut or readymade)
- Coriander leaves, chopped- 1 tbsp
- Oil- 2 tbsp
Preparation:
- Shell, devein and wash the prawns. Let the water drain from the prawns.
- Chop the onions and the tomatoes, slit and cut the green chillies.
- Take out coconut milk from a quarter of a coconut or use fresh coconut milk available in stores.
Process:
- Heat 2 tbsp oil in a kadai and add the chopped onions.
- Fry on medium to low heat till translucent( around 8-10 mins) and then add the green chillies.
- Add the ginger garlic paste. Mix and fry for around 2 mins till raw smell is gone.
- Add the chopped tomatoes, mix and add the salt. Cook for around 5 mins till tomatoes are soft.
- Add all the powders other than garam masala powder.
- Mix and add 1/2 cup of water. Bhuno on medium for around 2-3 mins till the masalas are cooked.
- Now add the prawns and mix well. Fry for around 5 mins on medium heat.
- Add the coconut milk, let it come to a boil, lower the heat to low and cover & cook for around 10 mins.
- Now add the garam masala powder, mix & sprinkle chopped coriander leaves.
- Serve hot with roti or rice.
