How To make French Country Soup
2 lb Beef shanks
2 cn Tomato sauce (small)
2 ts Sugar
1/4 ts Pepper
1 Med. onion, choppped
1 Wedge cabbage, 1"thick,chop
1 lb Cut green beans
2 qt Water
2 Beef bouillon cubes
1 t Salt
2 Whole cloves
3 Turnips, pared and diced OR>
1 Rutabaga,small
1 c Uncooked elbow macaroni
In dutch oven or kettle, combine beef, water, onion, tomato sauce, cabbage, bouillon cubes, sugar, salt, pepper and cloves. Bring to boil, simmer covered for 2 hrs. Add turnips, macaroni and beans. Simmer uncovered for 20 or 30 minutes more, or until tender.

French Country Vegetable Soup (make your own soup challenge)
I recently discovered the Amy's brand French Country Vegetable soup and it is amazing! I thought I would try something different on Food with Dottie and try and replicate the store bought soup in my own kitchen. I used the ingredients listed on the back of the can and through in some ingredients of my own and it turned out great!
Here is my recipe:
1 yellow onion
4 cloves of garlic
2 red bell peppers
2 zucchini
2 diced tomatos
1 container of sliced baby bella mushrooms
1 can of white beans
3-4 cups vegetable broth
1 and 1/2 cups long grain red rice
salt and pepper
olive oil
french seasoning (rosemary, time, basil, oregano)

This easy vegetable soup is packed with flavor and uses simple, everyday vegetables to their full potential. But there's plenty of room for customization — use any fresh or frozen vegetables you have on hand. It's the perfect blank canvas to work with for soup season!
A simple vegetable soup like this is my absolute favorite. It's nourishing, comforting, fresh, and light, yet filling enough to be a full vegetarian meal. But truth be told, I was never a fan of vegetable soup until I started making it myself at home, with this recipe. Because other versions I had tried were always been a bit bland and boring.
So what makes my version unique (and better)? The vegetables are sautéed with Italian seasoning and loads of garlic, then simmered in a savory broth with fresh lemon juice and parsley. And that punch of fresh lemon really brightens and enhances the flavor!
