Sometimes it can be difficult to cook without the right ingredients. Today I will show how to make good fried rice with the ingredients that you already have in your kitchen.

INGREDIENTS (Serves 2)
- 1 cup of long-grain rice (rinse with water until the water is clear)
- 2 tsp of vegetable oil
- 1 cup of water to cook the rice
- 1 cup of mixed vegetable
- 2 medium-size eggs
- 3 to 4 slices of bacon or other types of protein
- 1/4 cup of diced scallion
- 1.5 tbsp of soy sauce (Amazon Link -

Surprise Your Vegan Guests With This Delicious Eggplant Recipe
This No Frying Vegan and Gluten-Free Eggplant dish is made entirely from scratch, but it’s quite simple to prepare. We’ll roast the eggplant slices instead of frying them. This workflow is faster, less messy, and has a positive impact on the taste of the eggplants. Not to mention that eggplants are like a sponge and they can absorb a lot of oil which can lead to an oily-soggy and less appealing dish. The traditional Parmigiana di Melanzane recipe contains cheese. In today's video, we are using homemade Cashew-Tofu paste as a substitute. It is simple to make, lighter, and tastes delicious.

✅ Eggplant prep:
4 Large Eggplants,
Olive oil to brush (extra virgin),
Salt & black pepper to taste.
➡️Directions:
1: Cut the eggplants in half, then slice lengthwise (1/2 cm or 1/5 inch thick),
2: Brush them with olive oil on both sides,
3: Season with salt and pepper on both sides,
4: Lay them on parchment paper and put them in the preheated oven,
5: Roast them until golden brown.
✅ Tomato sauce:
500g /1Lb Pomodori pelati (San marzano)
30g - 2 Tbsp. Tomato paste to boost the Umami (optional)
1 Scallion,
1 stick of Celery,
3 cloves of Garlic,
10 leaves of fresh Basil,
2 Tbsp Olive oil (extra virgin),
3 Tbsp Nutritional yeast
7g - 1/2 Tbsp. Salt. (always taste, you might want to add more).
➡️Directions:
1: Chop the garlic, scallion, and celery,
2: Add them to a medium-sized pot and saute them in olive oil until golden brown,
3: Add the San Marzano tomatoes and cook for about 30 to 40 min,
4: Add the chickpea flour and stir for about 1 minute or until the sauce is thick,
5: Turn off the heat,
6: Add the fresh basil and salt to taste,
7: Done, no need to use a blender.
(Substitute: Premade tomato sauce)
✅Cashew-Tofu paste:
200g -7 oz. Cashews,
250g - 9 oz. Hard Tofu (pressed if possible, to remove the excess moisture),
150ml - 2/3cup. Vegan cream or vegetable bouillon,
40g - 1.5 oz. Nutritional yeast,
1 Tbsp. Sea salt,
1 tsp. Black Pepper,
1/2 tsp. Nutmeg,
3 Tbsp. Olive oil (extra virgin), or 45g of Vegan Butter (melted)
➡️Directions:
1: Toast the cashews until golden brown,
2: Cut the tofu into big chunks,
3: Place both cashews and tofu into the food processor and mix for 1 min. at the lowest setting,
4: Add the rest of the ingredients and mix for 2 more min. or until a paste is formed.
5: Taste and adjust if necessary. Done
(Substitute: Vegan Mozzarella or Vegan Ricotta)
