Easy Waffle Recipe | How to Make Homemade Waffles
This waffle recipe is so versatile, you can add just about any mix-in from chocolate chips to blueberries and even use the base for savory waffles.

Ingredients
1 egg
225g self-raising flour
1 tbsp golden caster sugar (optional)
250ml milk
50g butter, melted and cooled
½ tsp vanilla extract (optional)
1 tbsp sunflower or vegetable oil
maple syrup and icing sugar, to serve (optional)
Method
STEP 1
Crack the egg (for fluffier waffles, use only the yolk at this stage) into a large bowl, then tip in the flour and a generous pinch of salt. Add the sugar, if using, then gradually whisk in the milk followed by the melted butter until smooth. Whisk in the vanilla, if using. If you’ve chosen to make fluffier waffles, whisk the egg white to soft peaks, then gently fold this into the batter. Alternatively, make the batter by blitzing all the ingredients together using a blender or hand blender. Can be made 1-2 hrs ahead and chilled.
Heat a waffle maker following the manufacturer’s instructions, brush with a little of the oil, then ladle in enough batter to just cover the surface. Cook following the manufacturer’s instructions (usually 5-6 mins) until the waffles are golden brown and crisp. Serve immediately or keep warm in a low oven while you make the rest. Drizzle with maple syrup or sprinkle with icing sugar, if you like.

French Toast with Blueberry Compote

In my opinion, an egg type of bread works best for French toast as it creates a creamy, custardy interior. Choose a type of bread that won’t fall apart when soaked in custard. Avoid anything that is too soft, too thin, or has large holes.
For the French Toast:
6-8 slices egg bread like challah or brioche (preferably day-old)
4 eggs
1 cup milk, half-and-half, light or heavy cream
Vanilla extract
¼ teaspoon cinnamon powder
Salt, a pinch
Butter
For the Compote:
1 ½ cups blueberries (fresh or frozen)
¼ cup water
A squeeze of lemon
1 tablespoon sugar
1 teaspoon cornstarch
For serving:
Maple Syrup
Powdered sugar
PROCEDURE
1. Make the compote: In a small saucepan, combine all ingredients saving half a cup of blueberries. Set it over medium heat. While stirring constantly, let the mixture thicken until the blueberries start to burst. Add the remaining blueberries at the very end and turn off the heat. Set it aside.
2. Make the French toast: Slice the bread into 1” thick slices. Whisk eggs, cream, vanilla, cinnamon powder, and salt in a shallow container large enough to hold the bread. Heat a skillet over medium heat. Dip bread in the egg mixture until soaked through and flip it. The length of soaking depends on the kind of bread you are using. Careful not to get the bread too soggy or it will fall apart. Place some butter (a tablespoon at a time) on the pan and cook them on both sides until golden brown, about 2-3 minutes on each side. Add more butter as needed.
3. To serve: Top with powdered sugar, compote, and maple syrup. Enjoy!
