Ingredients -
Potato & Leek Soup -
3 Tbsp (42g) - Clarified Butter or Regular Unsalted Butter
4 - Large Leeks, Roughly Chopped
3 - Garlic Cloves, Roughly Chopped
4 - Small Potatoes, Cubed
1 Litre (4 Cups) - Vegetable or Chicken Stock
180ml (3/4 Cup) - Thickened or Whipping Cream
Seasoning To Taste
Bacon, Apple & Crispy Sage -
1 Tbsp (14g) - Clarified Butter or Regular Unsalted Butter
120g (4.2oz) - Streaky Bacon, Large Diced
1 - Apple, Peeled & Small Diced (I Used Royal Gala)
12g (0.4oz) - Fresh Sage, Roughly Chopped or Left Whole
Seasoning To Taste
Toasted Bread To Serve
Recipe Notes -
If you can't consume dairy or want to make this vegan friendly, substitute the butter for olive oil and the thickened cream for soy milk or oat milk.

QUICK + EASY TEX-MEX Mexican Style Soup Recipe!
Learn how to make an incredible spicy vegan Mexican soup in just literally minutes!
LAY HO MA!! This recipe is going to be a lifesaver for the days where you just can't be bothered. This spicy Mexican soup is fast, simple, and absolutely packed with flavour. Join me in this episode and learn how to make my version of a spicy vegan Mexican soup.
Ingredients:
1/2 red onion
2 pieces garlic
1 scotch bonnet (optional! very spicy!)
2-3 tbsp olive oil
1/2 tbsp cumin
1 1/2 tbsp smoked paprika
1/2 tbsp chili powder
2 tbsp dried oregano
1 800ml can peeled tomatoes
1 can black beans
2 cups corn
6 cups water or vegetable stock (plus 1 tbsp pink salt if using water)
3 tbsp tomato paste
2 tbsp cane sugar
1 avocado
1 small bunch cilantro
few tortilla chips
Directions:
1. Dice the red onion and garlic
2. Remove the seeds from the scotch bonnet and finely chop
3. Heat up a stock pot on medium high heat and add the olive oil
4. Add in the onions, garlic, and pepper followed by the dry spices
5. Give the pot a stir and add in the canned tomatoes (carefully!)
6. Use a spatula to break up the tomatoes
7. Add the beans, corn, and the water/veggie stock
8. Add the tomato paste and the cane sugar
9. Bring the soup to a boil, then its ready to serve
10. Top the soup with avocado cubes, fresh cilantro, and some crushed tortilla chips

Grilled Cheese & Roasted Tomato Soup
Good soup ????
Fix those late night cravings with some bomb as grilled cheese and spicy tomato soup ???????? here’s my recipe:
6 tomatoes, quartered
1 onion, quartered
1 capsium/ bell pepper, chopped
1 whole garlic bulb
Chilli flakes (optional)
1/2-1 cup unsalted vegetable stock
1/2-1 cup cream
3-4 basil leaves
Salt and pepper
2 slices of your favourite bread
Mozzarella cheese
Cheddar cheese
Butter
Method:
1. Chop off the top of your garlic bulb, leaving the cloves exposed. With your garlic, place all your other chopped vegetables into a large baking dish, drizzle generously with olive oil, chilli flakes, salt and pepper and bake at 200C for 50-60 mins until the vegetables are slightly charred and soft.
2. [optional] Use a blow torch and lightly torch your roasted vegetable to add extra char if you like your soup smokey. Careful not to burn it.
3. Transfer your vegetables into a pot or a blender with your stock, cream and basil. With a stick blender or a normal blender, blend your soup until smooth. Salt and pepper to taste.
4. For your grilled cheese, cut up 2 slices of bread. You can use any cheese you want or have on hand. I used mozzarella for the stretch and cheddar for the bitey taste. Butter your bread and grate as much cheese as your heart can take. Grill in a pan over medium heat until golden brown and cheese melted. Serve with tomato soup.

Minestrone soup which means “Big Soup” has always been a favourite of mine. It has so many goodies and can be served as a first course or a main meal as it’s quite thick. There’s no real set recipe for minestrone as it was usually made up using available vegetables in poorer times. I personally prefer it simpler as it has a fresher taste. It can be made as a vegetarian meal with vegetable stock or by using meat stock, this recipe uses chicken stock. You can also add pancetta for a different style flavour. Cook the hardy vegetables first and add the rest last, this will retain some bite. Add the basil leaves at the very end to get the full fresh aromas. Buy yourself the best rustic bread loaf, toast it and lace it with olive oil for a fantastic minestrone meal Italiano style. What an awesome comfort food!
Roasted Tomato and Basil soup
If you’re a tomato lover like I am, then you will love this soup. The tomatoes are firstly roasted to intensify their flavours and bring out the sugars. The selection of good quality tomatoes is of course important, you want sweetness and flavour. These days a lot of supermarket tomatoes taste like water chestnuts. So the best time to make this soup is when tomatoes are at their peak of the season. That’s also when fresh basil is in season, which is the other important ingredient. Master those two ingredients and you will have a soup to die for. There’s two options here, make it as a regular soup or take it to another level by adding some golden crunch puff pastry. The steam will rise pushing the dough into a dome shape making your soup look like a spectacular souffle from a fancy restaurant. Plus once you crack it open, a puff of fresh basil scented steam will permeate into your senses. It’s theatrical but it’s also a tasty combination.

If you’re a fan of the above hearty minestrone, then you will also love this! Harira is a Moroccan soup typically made with lamb or chicken, tomatoes, chickpeas, lentils, and a variety of spices. This version is made using chicken breast. It’s a soup that’s often served during Ramadan as a way to break the fast.
