Best Ever Roasted Sweet Potatoes Recipe - How to Bake Sweet Potatoes
These roasted sweet potatoes will hands down be your best way of roasted sweet potatoes. The sweet potatoes are deliciously soft inside and caramelized outside, perfect roasted sweet potatoes side dish for the holidays.
INGREDIENTS
3 large sweet potatoes ( i recommend using fresh newly bought sweet potatoes, they taste the best)
3 Tbs olive oil
1 1/2 tsp garlic powder
1 1/2 tsp onion powder
1 1/2 tsp paprika
1 Tbs brown sugar
1 tsp ground cinnamon
salt and pepper to your taste taste ( i used about 1 and 1/2 tsp salt and 1/4 tsp black pepper)
BRIEF INSTRUCTION
1. Cut sweet potatoes into cubes
2. Add the rest of the ingredients to sweet potatoes and mix very well
3. Place sweet potatoes into a greased baking pan, be sure to space them out well.
4. Bake at 425 F for 30 to 35 minutes

SOUP:
8 oz Dry Cannellini Beans
3 cloves Garlic
2 Bay Leaves
Olive Oil
1 Onion, chopped
3 cloves Garlic, minced
2 cups Celery, chopped
2 cups Carrots, chopped
¼ cup Fresh Parsley, chopped
2 Potatoes, cubed
1 qt Peeled Tomatoes
½ tsp Oregano
1-2 qts Water as needed
2 large heads Escarole, rough chop
8 oz String Beans, blanched
1 cup Ditalini Pasta, or your favorite soup pasta
Grated Pecorino Romano Cheese
Salt & Pepper to taste

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?

Soul Food Cabbage & Collard Greens | I Heart Recipes
Hey y’all! You asked for it, so here it is! My Soul Food Cabbage and Collard Greens!
I’ve had so many requests for this recipe, and I’m finally getting around to sharing it. Sorry it took so long, y’all! This is one of my favorites. It’s a classic soul food dish.
Usually when I make greens I use ham hocks or smoked turkey, but I wanted to use bacon for this recipe. Bacon is quick and easy. Fry it up and then add in chopped red bell pepper and onion. Cook until the onions are translucent. Add in the cabbage, collard greens, garlic, chicken broth and seasonings. Cover and cook over medium heat for 45 minutes, and that is it, fam! The cabbage and greens will be super tender and full of flavor, and your house will smell so good! This dish is the bomb, y’all! All you need now is some cornbread. Enjoy!

0:28 - Chop the cabbage.
0:35 - Chop a red bell pepper.
0:55 - Chop an onion.
1:08 - Chop the bacon.
1:21 - Add bacon to a pot.
1:33 - Fry the bacon.
1:43 - Stir often.
1:51 - Add bell pepper and onion.
1:56 - Stir.
2:12 - Cook until the veggies are translucent.
2:16 - Add in the cabbage and greens.
2:21 - Fold the ingredients together.
2:40 - Add minced garlic.
2:50 - Pour in chicken broth or water.
3:01 - Give it a quick stir.
3:05 - Sprinkle in the seasoning salt.
3:25 - Stir well.
3:44 - Cover and cook until done.
