How To make Ginger Pecan Chews
1/2 cup granulated sugar
1/2 cup butter or margarine
softened
1/2 cup molasses
1 jar crystallized ginger :
chopped
--2.7 ounces, about 1/2 cup 1 egg
2 cups all-purpose flour
1 teaspoon ground ginger
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup pecans -- chopped
Preheat oven to 375 degrees. Mix the sugar, margarine, molasses, crystallized ginger and egg in a large bowl. Stir in the flour, ground ginger, baking soda and salt. Stir in the pecans. Drop the dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheets. Press a pecan half in the center of each cookie, if desired. Bake for 12 to 14 minutes, or until almost no indentation remains when touched in the center. Immediately remove from the cookie sheets. Cool on wire racks. Makes 2 1/2 to 3 dozen.

INGREDIENTS (For 10 springform pan)
CRUST:
1 1/2 Boxes ginger snap cookies
1 stick melted butter
VANILLA SPICE CHEESECAKE:
8 packs room temp creamcheese
2 cups granulated sugar
dash of allspice
splash of vanilla extract
splash of butter extract
PECAN PIE TOPPING
1 cup dark brown sugar
2 stick butter
1/2 cup heavy whipping cream (I didn't have any so used coffee creamer in video which worked fine)
1/2 light corn syrup
splash vanilla extract
4 cups chopped pecans
BAKE CRUST FOR 9-10 MINS ON 350°
REFRIGERATE CHEESECAKE FOR 8 HOURS

Just when you think there couldn’t be a sweet treat to rival the chocolate chip cookie, here comes this recipe. Chocolate Pecan Scones, fluffy and flavorful with dark chocolate and pecans! Not too sweet, these scones are perfect for breakfast or brunch and I think good enough for a special day treat like Christmas morning. The recipe is easy to follow, a wet dough makes the best scones and no chilling time needed, you can whip up the dough and bake straight away! The only thing to think about is to use super, cold butter and I recommend freezing it for a few minutes before you add it to the flour mixture. There you have it, you can enjoy this recipe hot out of the oven or at room temperature. Enjoy!

Ginger Chocolate & Orange Granola + Maple Pecan Granola | My Favourite Breakfast!
This Ginger, Chocolate & Orange Granola is the perfect pick-me-up first thing on a morning. Or, perhaps you're a fan of the classic combo; Maple Pecan Granola. Well then, you are in luck.
What's better than granola? Two types of granola!! I'd planned on making these for breakfast, but they are so good that I'm snacking on them all hours of the day. Crisp and crunchy; both pack a real flavour punch. Especially the ginger and orange one, it's the Chuck Norris of breakfast cereal!
Not only are they delicious; there are also options for oil free and no refined sugar. It probably goes without saying, but these are both are 100% vegan granola! (gluten free too!). The oil free granola is based on a recipe from @LazyCatKitchen; thanks so much for the work you do ❤️
