Love this little veg stew. Greek maybe not but is has that style and vibe, onions, garlic, chickpeas, eggplant, potatoes, courgettes, mushrooms, tomatoes. Really nice with a little feta cheese on the top if you are vegan

Like all pasta, Greek Kritharaki (i.e. Orzo type pasta) is very versatile and can be combined with a huge variety of other ingredients.
What makes Orzo ideal in comparison to other pasta? That you can just cook it together with the other ingredients in one pot, without having to strain it. That results in a less messy, easier, quicker, more energy efficient dish.
This quick one-pot stew combines Kritharaki with leeks, other vegetables and spices in a lush tomato sauce.
Try it and see for yourself what a delicious dish I have created for you and your family to try!
Suitable for vegans and fasting.
INGREDIENTS:
• 1 cup / 250 gr / 9 oz Greek Orzo Pasta-Kritharaki (or Manestra, I used Country type from Crete)
• 3-4 tbsp. / 45-60 ml Olive Oil
• 3 Leeks, finely chopped (not the green part)
• 4-5 Spring Onions, finely chopped (not the green part)
• 4-5 small Carrots, finely chopped in rounds
• 1 small, sweet Onion, finely chopped
• 3 tbsp. / 45 ml Tomato Puree (paste)
• ½ tsp. ground Nutmeg
• ½ tsp. ground Cinnamon
• ½ tsp. All-spice (Bahari)
• 625 ml / 2.5 cups HOT Water
• 50 gr / 1.75 oz / 1 piece Red Sweet Roasted Florina Pepper, finely chopped
• ½ bunch fresh Parsley, finely chopped
• Ground Salt and Pepper
• Optional: 1 tsp. Sugar

Όπως όλα τα ζυμαρικά, το Κριθαράκι είναι πολύ ευέλικτο και μπορεί να συνδυαστεί με μια τεράστια ποικιλία άλλων υλικών.
Τι το κάνει όμως ιδανικό σε σύγκριση με τα άλλα ζυμαρικά; Ότι μπορείτε απλά να το μαγειρέψετε μαζί με τα υπόλοιπα υλικά σε μια κατσαρόλα, χωρίς να χρειαστεί να το στραγγίσετε. Αυτό έχει ως αποτέλεσμα λιγότερη ακαταστασία, και ένα πιο εύκολο, πιο γρήγορο, πιο ενεργειακά αποδοτικό φαγητό.
Αυτό το γρήγορο πιάτο μιας κατσαρόλας συνδυάζει Κριθαράκι με πράσο, άλλα λαχανικά και μπαχαρικά σε μια πλούσια σάλτσα ντομάτας.

Κατάλληλο για βίγκαν και νηστεία.
ΥΛΙΚΑ:
• 1 φλ. / 250 γρ / 9 oz Κριθαράκι (Μανέστρα, εγώ χρησιμοποίησα χωριάτικο από την Κρήτη)
• 3-4 κ.σ. / 45-60 ml Ελαιόλαδο
• 3 Πράσα, ψιλοκομμένα (όχι το πράσινο μέρος τους)
• 4-5 φρέσκα Κρεμμυδάκια, ψιλοκομμένα (όχι το πράσινο μέρος τους)
• 4-5 Καροτάκια, ψιλοκομμένα σε ροδέλες
• 1 μικρό, γλυκό, ξερό Κρεμμύδι, ψιλοκομμένο
• 3 κ.σ. / 45 ml Ντοματοπελτές
• ½ κ.γ. αλεσμένο Μοσχοκάρυδο
• ½ κ.γ. Κανέλα σκόνη
• ½ κ.γ. Μπαχάρι
• 625 ml / 2,5 φλ. ΖΕΣΤΟ Νερό
• 50 γρ / 1,75 oz / 1 κόκκινη, γλυκιά, ψητή Πιπεριά Φλωρίνης, ψιλοκομμένη
• ½ ματσάκι φρέσκος Μαϊντανός, ψιλοκομμένος
• Φρεσκοαλεσμένο αλάτι και πιπέρι
• Προαιρετικά: 1 κ.γ. Ζάχαρη
