How To make Grilled Portobella Mushrooms with Mango Chutney
4 Portobella mushrooms 1
-large ripe mango 1 Red bell pepper 1 jalapeno
-pepper (optional) -soy sauce vinegar 1 ts Miso 1 bunch arugula
-lettuce Carefully remove stems from mushrooms (use for soup) and clean them thoroughly. Marinate in vinegar/miso/soy sauce for an hour or so. Dice the mango and pepper, chop the jalapeno, and toss with a little vinegar. Clean the lettuce and separate into single leaves. Grill the mushrooms on both sides. When grilling the top, turn the mushroom 90 degrees halfway through to get a square or diamond crosshatch pattern. To serve, fan 3 lettuce leaves on the plate, center the mushroom, and place a dollop of chutney on either side. The original recipe is in Vegetarian Times, probably sometime last summer. ●1/4 cup mayonnaise
●Dash ground red pepper (cayenne)
●4 kaiser rolls, split
●1 1/3 cups mixed spring greens (from 5-oz bag)
●4 oz Brie cheese, cut into 16 pieces

FOR SWEET POTATO MASH
- 1 LARGE SWEET POTATO (BOILED)
Just boil , peel and mash with fork , if you like you could sprinkle
Salt
Pepper
Lemon Juice
for extra flavours

FOR STUFFED PORTOBELLO
- 2 LARGE PORTOBELLO MUSHROOMS
- 3 SPOONS EVOO FOR COOKING
- 2 TBSP EVOO TO POLISH THE PORTOBELLO
- 3 TBSP
- 3 TBSP BALSAMIC VINEGAR
- 1 ONION
- 2 SWEET PEPPERS
- 1 BUNCH OF SPINACH
- 1/2 CUP MARINARA SAUCE
- 1/4 TSP SALT (OPTIONAL)
- 1 TSP PAPRIKA (OPTIONAL)
saute onions peppers , add spices and marinara sauce , let it cool down , then stuff the mushrooms and cook them in steams in a covered skillet .... you could add evoo and balsamic to the skillet then place the mushrooms on it and cover.
