How To make Hawaiian Turkey Salad
3 c Cooked brown rice
2 c Cooked turkey
(coarsely chopped) 8 oz Pineapple chunks in juice

drain; reserve juice 8 oz Sliced water chestnuts
drained 1 md Apple; unpeeled
:
cored and chopped 1/3 c Chopped macadamia nuts
1/2 ts Salt
1/2 c Plain yogurt
Lettuce leaves 1/4 c Shredded coconut; toasted
Combine rice, turkey, pineapple, water chestnuts, apple, nuts and salt. Toss lightly with yogurt and 1 tablespoon pineapple juice. Serve on lettuce leaves and garnish with coconut. Hey guys! Watch me as I make this delicious Chicken Salad. Feel free to use fresh chicken for this recipe. It was all about convenience today, so I thought I'd share a quick recipe using canned chicken. You can substitute the canned chicken for store bought rotisserie chicken, or you could also make your own chicken. Customize it to fit your needs. I hope you enjoy this recipe.
Ingredients:
3 cans (37.5oz total) of chicken (or fresh chicken). I bought the chicken from Sam's Club
2 stalks of celery
1/2 red onion
About 1.5 to 2 cups of Miracle Whip (or mayo)
Natures Seasoning
Black Pepper
2 tablespoons of pickle juice (you could also add relish)
1 tablespoon (or more) of sugar (optional)
You could also add eggs or sweet relish to this recipe.
Be sure to drain the chicken if you're using cans.

Betty's Turkey Salad
Betty demonstrates how to make Turkey Salad. This is a great way to use turkey or chicken leftover from a meal.
Turkey Salad
¼ cup sliced almonds, toasted
½ cup mayonnaise
1 teaspoon lemon juice
¼ to ½ teaspoon salt (or to taste)
dash of ground black pepper
2 cups finely-chopped cooked turkey (either white or dark meat or a combination)
¼ cup finely-chopped celery
2 tablespoons finely-chopped green onion tops
1 tablespoon diced pimiento, drained
In a medium-sized mixing bowl, stir together almonds, mayonnaise, lemon juice, salt, pepper, turkey, celery, green onions, and pimiento. Transfer to a nice serving bowl. Cover with plastic wrap and refrigerate until ready to serve. This turkey salad is quite versatile and can be spread on bread for sandwiches, served on lettuce leaves, or used as a stuffing for pastry puffs—all delicious! Enjoy!!! --Betty :)
