How To Cook Collard/Mustard Greens the RIGHT Way! - If you're looking for a recipe that will show you how to cook collard/mustard greens the right way, you've come to the right place! In this video, we're going to show you how to cook collard/mustard greens the right way, using simple, step-by-step instructions.
Soak the collard/mustard greens in a large pot of water overnight, then Drain and rinse them before cooking. In a large pot, cook the collard/mustard greens over medium-high heat until they're wilted and bright green. This easy recipe is perfect if you're looking for a delicious and easy way to cook collard/mustard greens!
Ingredients:
3 - 4 bunches Collard Greens
1 - 2 bunches Mustard Greens
1 Smoked Turkey Leg or Ham Shank
1 - 2 tsp. Red Chili Flakes
4 cups Chicken Stock or Broth
Salt and Pepper, to taste
Creole Kick, to taste ( I used 2 tbsp.)
2 tbsp. Butter
6 - 8 slices of Thick Cut Bacon
1 tbsp. Vinegar
1 Onion, chopped
4 - 5 Garlic Cloves ( I used Garlic Paste), minced

Cooking and Pressure Canning Mixed Greens With Smoked Hog Jowl
Hello and welcome to Old Ways Gardening and Prepping. ???? Would like to welcome you underneath the canopy on this chilly morning to do some cooking and pressure canning. Today I'm going to be cooking up the beautiful mustard and turnip greens that I bought at the Farmers Market. Definitely looking forward to getting these beauties in to jars and having them saved back for future meals.
Cooking and pressure canning greens is very easy anyone can do it as long as you have everything that you need. Now unfortunately greens do have to be pressure can and especially if they have meat in them. Will walk you through the whole process so let's start getting busy.
Now the way each person cooks greens will be differently but here is the ingredients that I used:
4 large bunches of turnip greens with turnips
4 large bunches of mustard greens
2 pounds of smoked hog jowl, cubed
3 medium onions, diced
3 cloves of elephant garlic, minced or about 4 tablespoons of minced garlic
2 TBsp of oregano
2 tsp of red pepper flakes, optional
2 TBsp of slap ya mama seasoning
Half a bottle of liquid smoke, 2 oz used
2 packages of chives, minced optional
1 package of Italian parsley, minced optional
1 quart jar of ham bone bone stock, optional
Turnips, cleaned and sliced
Now you can change the seasoning of your greens it is perfectly fine to do so. This is the way that I do my greens, and be honest I do change it up once in awhile. It just depends on what I have on hand to use. One has to be flexible to be able to cook. Also remember to always taste your cooking liquid/pot liquor before canning your greens to adjust the seasoning amounts. No one wants to can up greens that don't have the right amount of seasoning in them.
