Recipe: Irish Apple Cake
Chef Robert Gerstencker, an instructor in our Culinary program, shares this Irish Apple Cake recipe in time for St. Patrick's Day.
TRANSCRIPTION
We’re going to make an authentic pie or apple cake that would’ve been made in Ireland. We’re going to put a little bit of oatmeal streusel on top and we’re going to use some nice tart apples.
The first thing that we are going to do is we are going to take our sugar and butter and we’re going to cream that together. The butter shouldn’t be too cold you want to leave it at room temperature for a while. A hand mixer works well for this or a stand mixer.
Once the sugar and the butter have been creamed, they’re going to have a very light almost fluffy consistency. They’re going to look like that. So you’re just going to scrape down the sides and put it back into the center of the bowl and once that’s done you’re going to whip in the eggs, two eggs in this case.
That’s going to start your batter forming. On a medium speed, you’re going to put in one egg at a time. In between each egg you’re going to scrape down the side of the bowl, so you get everything incorporated evenly. This technique is called creaming when you mix the butter, the sugar and the eggs together. You get a nice creamy consistency.
Once that’s all incorporated, we’re going to prepare the dry ingredients and for that we’re going to take some flour, a little baking powder and cinnamon, some salt and you’re going to mix that together. Make sure the baking powder is mixed in with the flour so that it has an even rise on it. This batter is kind of like a wet biscuit dough or a thick pancake dough. The crust actually forms when it bakes in the oven and the outside gets a little bit darker.
Once the flour, cinnamon, salt and baking powder are mixed together you’re going to drop that into your wet mix and slowly mix it together. You don’t want to over-mix this, just until it’s incorporated.
Mix it make sure that everything is incorporated evenly and you’re going to come up with a nice little batter like that and at that point you’re going to add a little bit of cream to this mixture so about 2 tablespoons of cream and that’s going to lighten it up.
That goes into a well-greased and floured cake pan. It’s really important that you use butter or shortening and then dust it with a little bit of flour otherwise it won’t come out of the pan easily. I’m using a spring-form pan but you can use a brownie pan and then you’re going to pour the batter into the cake pan. Make sure you get everything out. Just a little bit of water at the end of your spatula helps you spread out the dough. You want an even coating at the bottom of the pan.
Then you’re going to take three apples. I use Granny Smith apples, they’re a little tart but any firm baking apple will work very well for this dish. You basically peel them and just slice them pretty thin, and you just drop them onto the top of the cake here, the batter. ...
We’re going to make a quick streusel topping, which is simply a little bit of flour, some rolled oats, some butter, and a little bit of sugar and we’re going to mix that up.
First you’re going to take the flour and the butter and you’re going to crumble it together until you have what looks like ground almonds. It’s like making pie dough, you want to put the butter into the flour. This streusel topping can be used for muffins, it’s very versatile in use and can use for many applications in baking. It adds a nice crunch to the top of a pie or cake and the oats will get a nice toasty flavor.
Once the butter has been incorporated into the flour, we’re going to add our sugar and our oats, you’re going to continue mixing until you have little crumbles. This mix can be made ahead of time it can be kept in the fridge for a couple days without a problem. Once it starts coming together and you’re getting a little bit of compaction there and it starts crumbling together you want to sprinkle that on top of your cake now. All the way around, nice and even so that it has an even baking, all the way to edge, just like that.
That will be Irish Apple Cake and we’re going to pop that into an oven at about 350 degrees for about 45 to 50 minutes, just until the top gets nice golden brown and when you put a toothpick in it, it comes out clean without any stodgy bits in the middle.
The top should be golden brown and the cake itself should have settled around all the apples. So you take it out of the oven, let it sit for about 5 minutes or so and then take it out of the pan. You can see it’s a nice golden brown and you’re looking for even browning around all of the streusel; that’s what gives it its nutty flavor.
You can serve this with any kind of ice cream, cream or sauce. We’re going to serve it today with a crème anglaise which is kind of like a vanilla sauce. We tinted it green to celebrate St. Patrick’s Day.

*** The recipe: (baking pan size: 20cm / 8 inches)
2 / eggs
65g / granulated sugar (4+1/2 tablespoons)
8g / vanilla sugar ( 1/2 tablespoon)
A pinch of salt
Mix well
100ml / milk (1/2cup - 1 tablespoons )
40ml / vegetable oil ( 3 tablespoons)
80g / all-purpose flour (1/2 cup)
10g / baking powder ( 1,5 tablespoons)
Mix well
1 teaspoon / orange zest
3-4 / sweet apples
Pour into the batter and mix well!
Bake in the preheated oven at 180 ° C / (356 ° F) for 50-55 minutes!

Irish Apple Cake - Em's Sweet Life
This recipe brings back many fond memories. My mum has been making Irish Apple Cakes ever since I can remember. It was always and still is a family favourite.
This Irish Apple Cake recipe is super simple. It does not take much to whip up the batter and pop it in the over. Then 45 min later you have a delicious Apple cake. Serve it for afternoon tea or dessert, or a sneaky slice for breakfast…
The cake is very dense making it perfect to be served with custard. Being in Australia I like to serve my Irish Apple Cake with ICECREAM.

*Irish Apple Crumble Cake Recipe*
*Timings:*
• Prep Time: 15 mins.
• Cook Time: 1 hour.
• Total Time: 1 hour 15 mins.
*Servings:*
• 1 cake of 8 slices.
*Ingredients:*
_For the Irish Apple Cake:_
• ½ cup + 1 tbsp (125g/4oz) Unsalted Butter.
• ½ cup + 2 tbsp (125g/4oz) Caster Sugar.
• 1 tsp Vanilla Extract.
• 3 Medium Eggs.
• 1¼ cup (200g/7oz) Plain/All Purpose Flour.
• 1 tsp Baking Powder.
• Pinch of Salt.
• 1 tsp of Cinnamon.
• 3 Granny Smith Apples (peeled and chopped into cubes or sliced thinly).
• 3 tbsp Milk.
_For The Crumble topping:_
• ½ cup + 2 tbsp (100g/3½oz) Plain/All Purpose Flour.
• Pinch of Salt
• ¼ cup + 3 tbsp (100g/3½oz) Unsalted Butter.
• ½ cup (100g/3½ oz) Caster Sugar.
• ¼ cup (30g/1oz) Porridge Oats/Rolled Oats.
_Serve with:_
• Ice Cream.
• Whipped Cream.
• Caramel Sauce.
*Method:*
Preheat the oven to the following temperatures:
• 160°C/320°F [Fan Oven]
• 180°C/360°F [No-Fan]
• Gas Mark 4.
_For the crumble topping:_
1. Mix the flour, salt, butter, sugar and porridge oats.
2. Rub in the cold butter with your fingers until fully incorporated and you've reached the texture of coarse breadcrumbs.
3. Place in the fridge to chill.
_For the Irish apple cake:_
1. Line the base and sides of an 8 round loose-bottom cake tin.
2. Cream together the butter and sugar until soft and pale in colour.
3. Add the vanilla and add eggs to the mixture one by one until thoroughly combined.
4. Sieve in the flour, baking powder, salt & cinnamon and mix.
5. Add in the chopped apple and milk and fold them in.
6. Spoon the mixture into the prepared cake tin and smooth the top.
7. Place the crumble mix on top of the cake batter.
8. Bake in an oven for 60 minutes or until a knife inserted into the middle of the cake comes out clean.
9. Once the cake is baked, remove it and allow it to sit for 15 minutes before removing the tin.
10. Serve warm with ice cream or whipped cream (or why not both) plus my caramel sauce.

Why Doesn't Everyone Make Apple Cake Like This
I'm sorry but when I think of cake, my mind immediately goes to 3 to 4 thick and double or triple layer. I do not like super skinny sheet cake thick cake. It's not enough for me?
