Traditional Irish potato pancakes, also known as boxty, are made with a mixture of mashed and grated potatoes for a texture that's part pancake, part hash brown.

Grated Potatoes 2
Boiled Mashed Potato 1 Large
All Purpose Flour 1 cup
Milk 1 cup
Garlic Chives 1 tbs
Salt as per Taste

I've never had such delicious potato cake! Easy and Cheap Mashed Potatoes Recipe
Ingredients:
3 Potatoes (420g)
¼cup Parmesan cheese
1 Green onion
Salt and black pepper
2tbsp Unsalted butter
2 eggs
½cup All purpose flour
1/3cup Bread crumbs
Vegetable oil
Recipe:
3 potatoes
Dice the potatoes
Add the potatoes in a pot
600ml water
A pinch of salt
Cook for 15 minutes on medium-high heat
After 15 minutes
Drain the water after 15 minutes
Add 1tbsp unsalted butter
Salt and black pepper
Mash the potatoes
1 green onion
Add the chopped green onion to the bowl
¼cup parmesan cheese
Mix well
Refrigerate for at least half an hour
1/3cup All purpose flour
2 eggs
½cup bread crumbs
Shape the potato into small flattened balls
Repeat
Coat with flour, egg, and then breadcrumbs
Repeat
Medium heat
Vegetable oil
Fry for 3 minutes
Flip over and fry for another 2 minutes
Done!

???? Donegal Boxty Recipe ????
Ingredients
► 50g/2oz Plain Flour
► 4 Large Potatoes, peeled and grated
► 1 Egg, beaten
► Pinch of Bread Soda, sieved
► Salt and Pepper
► Oil for frying
Method
1) Put grated potatoes, flour, bread soda, egg, salt and pepper into a bowl.
2) Mix well until all ingredients are blended together. Use as soon as mixture is mixed, do not allow to stand as the mixture can discolour.
3) Heat a little oil on a frying pan, when hot drop spoonfuls of mixture onto pan and fry for about 3 to 4 minutes, then turn and repeat on the other side.
4) Boxty should be golden brown when cooked.
5) Serve hot.

Instructions:
Prepare Potatoes:
Peel and dice the potatoes.
Place the diced potatoes in a pot of salted water and bring to a boil.
Cook until the potatoes are tender when pierced with a fork, about 15-20 minutes.
Drain the potatoes and mash them while they are still warm.
Make Potato Dough:
In a large mixing bowl, combine the mashed potatoes with melted butter.
In a separate bowl, whisk together flour, baking powder, salt, and pepper.
Gradually add the dry ingredients to the mashed potatoes, mixing well.
Add chopped parsley to the mixture.
Form a Dough:
Begin forming a dough. If the mixture is too dry, add milk gradually until a soft but not sticky dough forms.
Roll Out Dough:
On a floured surface, roll out the dough to a thickness of about 1/2 to 1 inch.
Cut into Rounds:
Use a round cutter or a glass to cut the dough into rounds.
Cook Potato Cakes:
Heat a skillet or griddle over medium heat.
Cook the potato cakes on the hot surface until golden brown on each side, about 3-4 minutes per side.
Serve:
Serve the Irish Potato Cakes warm with your choice of toppings or as a side dish.
