1 c Mashed potato 2 c Flour 1 ts Salt 1 Tbpp baking powder 2 Beaten eggs 1 c Milk 4 tb Light corn syrup 1 tb Nutmeg Do not expect these to be like American pancakes, but they have an excellent flavor. Boxty Irish Potato Pancakes (great recipe for leftover mashed potatoes)
Boxty is a traditional Irish potato pancake that originates from County Mayo in Ireland. I understand many cultures have their own version of potato pancakes (I know there are at least three different versions of Korean potato pancakes I can think of). Boxty tastes like a hybrid of potato pancakes as we know here in the US and hash browns we also are accustomed to here in the States. It's made with a combination of raw grated potatoes and cooked mashed potatoes. Boxty is typically served with butter, but my kids love to eat them with sour cream.

It is an easy stove top recipe for any home cook. Soft, buttery inside, perfect to serve with sour cream and chopped scallions on top. Boxty is a hearty vegetarian dish.

Ingredients and recipe: 1 potato (200g) Dice the potato Place in a pot Water Cook for 15 minutes on medium-high heat Drain the water Mash the potatoes 1 onion Slice the onion 50g carrot Shred the carrot Medium heat Olive oil Cook for 2 minutes Add the carrot Cook for 3-5 minutes Add to the mashed potato Mix well 1 egg 2tbsp flour 30g parmesan cheese 10g parsley Salt Black pepper Paprika Mix well A bit of oil Scoop some potato and shape it into a ball Coat in bread crumbs Medium heat Vegetable oil Place the patties in the pan Fry for 3-5 minutes 300g cucumber Thinly slice the cucumber 1tsp salt Let sit for at least 10 minutes Flip over and fry for another 3 minutes Done! 2tbsp sour cream and 1tbsp mayonnaise 8g dill and 2 cloves of garlic Mix well After 10 minutes Squeeze out the exceed liquid 1tbsp soy sauce 1/2tsp rice vinegar 1/2tsp white sugar 1/2tsp sesame oil A pinch of salt Mix well Dice some ginger 1tsp ginger 1tbsp white sesame seeds Roast for 3-5 minutes on low heat Add to the cucumbers Mix well So crispy and delicious! Super delicious with the sauce and cucumber salad!

Irish Potato Bread/Farls, Tattie Griddle Scones or English Potato Cakes? Recipe and controversy!
Now, far be it from me to commandeer the food culture of another country but I hereby claim potato farls, or tattie scones, for the Queen of England - and they will now be officially forever known as potato cakes. I'm doing this of course due to my massive sense of entitlement as an Englishman as I hold on to the idea that we are still somehow, some kind of major world power.
This is not delusional thinking in any way. But you would have to be deluded to believe that this simple griddle scone isn't an absolutely cracking recipe. So simple and yet so satisfying. So don't worry about its origins. Just make it and then eat it with no sense or admission of guilt.
