Ingredients
1 cup butter (2 sticks, at room temperature)
1 1/4 cups sugar
2 Tbsp baking powder
1 pinch salt (use a 1/4 tsp if using unsalted butter)
1/2 tsp cinnamon
1/4 tsp nutmeg
4 cups all-purpose flour
4 Ambrosia apples (peeled, cored, and finely sliced and chopped)
1 1/2 cups whole milk
2 large eggs
sauce: 6 large egg yolks, 1 1/2 cups heavy cream, 1/2 cup sugar, 1/2-1 Tbsp vanilla extract

The best Irish Apple Cake Recipe
Ingredients:
Custard:
1/2 cup milk
1/2 cup heavy cream
1/3 cup sugar
2 lg egg yolks
1 tsp vanilla
1/4 tsp salt
1. Fill a large bowl halfway full with ice water and set aside. In a medium sized saucepan add milk and cream. Heat over medium heat until it starts to steam. We want to scald this mixture not boil it. Keep a close eye on it.
2. In a medium sized bowl add 2 large egg yolks, sugar and salt. Whisk together until it is a yellow paste. Slowly pour in the scalded milk mixture. Add just a little at a time while whisking constantly. After it is all added and whisked, strain it through a fine mesh sieve into another bowl.
3. Take this bowl and put it into the larger bowl that's filled with ice water. (Be careful the ice water doesn't get into the custard.) Stir until the mixture cools down. Add vanilla extract and stir. Cover bowl with plastic wrap and put into the fridge. Let it sit for 3 hours.
Cake:
1 3/4 cup all purpose flour
1/2 cup sugar
1/2 TBSP b. powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
2 large eggs
1/2 cup milk
1 TBSP vanilla
1/2 cup Butter (cold)
2 medium sized granny smith apples (You will need about two cups)
Whisk flour, b. powder, salt, cinnamon, and nutmeg together in a medium sized bowl. Stir in sugar. Cut in butter until it resembles coarse crumbs. Dice apples and toss into mixture. Set aside
In a large bowl add milk, eggs, and vanilla. Whisk till combined.
Add dry ingredients to wet and fold till combined. Spray an 8 inch cake pan with canola oil and cut out parchment for the bottom of the pan. Add cake batter to the pan and even out on top.
Streusel:
2/3 cup all purpose flour
1/2 cup brown sugar
1/2 tsp salt
6 TBSP butter melted
In a small bowl, mix together flour, sugar, and salt. Add melted butter to the mixture and toss with a fork.
Sprinkle streusel over the top of the cake and bake at 350 degrees for 50-55 minutes or until cooked through. Let cool off 10 minutes before loosening the edges of the cake with a knife.
Pop out the cake and let it cool completely. Serve with custard. Enjoy!!

Irish Apple Crumble
INGREDIENTS
4 Bramley cooking apples (or what ever cooking apples you use)
¼ Cup (2oz/50g) granulated sugar/ caster sugar
(150g/6oz/ ¾ Cup) plain flour (also works well with gluten-free flour)
¾ Cup (3oz/75g) salted butter, cold
¼ Cup (2oz/50g) granulated sugar/ caster sugar
1 lemon juiced to stop the apples turning brown
METHOD
1. First, you need to prepare the apples. Core and chop the apples into 1-2cm chunks.
2. Put the apples into an ovenproof dish. Toss in some lemon juice juice to stop it going brown. Sprinkle over the sugar
3. Place the flour and the sugar in a mixing bowl. Add the butter and use your hands to mix rub in the butter until the mixture resembles large breadcrumbs. Pour this evenly on top of the apple.
4. The crumble topping can be made a day in advance and it can also be frozen.
5. Bake the crumble at 180C/350F for 35/45 minutes or until nicely browned on top and the apples are bubbling. Eat hot from the oven with whipped cream. Enjoy!
