How To make Italian Sausage with Grilled Onions, Peppers, Pineapple and Jalapeno

4 large Italian sausage links
sliced in half :
lengthwise 1 large green bell pepper
cut into 1 1/2 " :
wide strips 1 large red bell pepper
cut into 1 1/2 " :
wide strips 1 large vidalia onion
cut in center and :
then in 1" slices 2 jalapenos
quartered 1 cup fresh pineapple :
cut in large chunks 1/4 cup fresh pineapple juice 1 tablespoon fresh picked rosemary salt freshly ground pepper Prepare a wood or charcoal grill and allow it to burn down to embers. Toss vegetables and pineapple in olive oil and season to taste with salt and pepper. Grill with sausage for 5 minutes or until vegetables are tender and sausage is brown and heated through. Place in a small mixing bowl and add pineapple juice and rosemary. Toss and season to taste with salt and pepper. Serve over mashed potatoes.

Ingredients 1 12 oz pkg al fresco Spicy Jalapeno Chicken Sausage, fully cooked, sliced, 1/4 thick 1 tbsp extra virgin olive oil 2 tbsp dry sherry 1 cup fresh mango, 1 inch chunks 1 cup fresh pineapple, 1 inch chunks 1 1/2 cup fresh salsa 1/2 cup prepared fresh/frozen edamame (soybeans) 1/2 cup canned black, unsalted soybeans, rinsed 3 cups cooked Jasmine rice 1 tbsp fresh cilantro chopped
Instructions -Heat a 12 inch skillet with olive oil over high heat. -Quickly saute the jalapeno sausage for 2 minutes, add the dry sherry and cook 2 more minutes. -Toss in the mango and pineapple and saute for 2-3 minutes. -Add the fresh salsa, edamame and black beans, continue to cook 2-3 minutes just to heat through. -Mix the chopped cilantro with the rice. Spoon the sausage and mango and pineapple salsa over the rice and serve immediately.
