Minestrone is a hearty Italian soup born out of the peasant culture in rural Italy, where nothing was put to waste. This recipe was created as a way to use up whatever vegetables and provisions were left over at the end of the week. Sometimes even the end pieces of cheese would be added to the simmering pot for additional flavor. With a rustic mix of seasonal vegetables, with beans, pasta, or even rice, in a flavourful tomato base, this stew-like soup became a beloved and wholesome one-pot meal in the Italian countryside.
Today it is an iconic dish, and with our Kashmiri Khwahish paste, you can make our fiery Indo-Italian version of it for a wholesome meal-in-a-bowl!
Serves 4 | Time: 40 minutes
Ingredients
· 4 tablespoons of Oil
· 1 onion, chopped
· 2 carrots, chopped
· 200-gram packet of Bhuna Pisa Kashmiri Khwahish paste
· 2 cups Mixed Vegetables, diced (potatoes, pumpkin, green beans, peas, zucchini, etc)
· 6 cups of water
· 1 teaspoon Salt, or more to taste
· Freshly ground black pepper
· 1 cup pasta like Macaroni or Farfalle
· 1 cup cooked Rajma
· 1 bunch of baby spinach leaves, washed and roughly chopped
· Grated cheese, for garnishing
Method
1. Heat the oil in a heavy-bottomed pot, and add the onion, carrot, Bhuna Pisa Kashmiri Khwahish paste, and a pinch of salt. Cook for 7-10 minutes, stirring often until the vegetables have softened and the onions are turning translucent.
2. Add the mixed vegetables and cook for about 2 minutes.
3. Next, add water and season generously with freshly grounded pepper.
4. Raise the heat to medium-high and bring the mixture to a boil. Then reduce the heat to low and simmer the soup with the pot partially covered, leaving a small gap for steam to escape.
5. Cook for 15 minutes, then remove the lid and add the pasta, rajma, and spinach. Continue simmering, uncovered, for 20 minutes or until the pasta is cooked and the greens are tender.
6. Remove the pot from the heat. Taste and adjust the salt and pepper to taste.
7. Pour into large bowls, garnish with grated cheese and serve hot for a delicious one-bowl meal.
